Kilchoman Madeira Cask Matured 2021
This distillery was founded by Anthony Wills in 2005 and was the first distillery built on Islay for well over 124 years.
Kilchoman distillery is Islay’s only single farm single malt Scotch Whisky producer on this outstanding island.
This expression was distilled in May 2016 then matured in 46 fresh Madeira hogsheads for 5 years and 3 months, bottled in August 2021.
They produced 17,000 bottles at 50% Alc/vol and classed as heavily peated at 50 ppm.
Bottled with its natural colour and unchillfiltered.
Anthony Wills said, “Kilchoman really lends itself to maturation in fortified wine casks. The rich fruity character of the casks balances nicely with the creamy citrus sweetness of our new spirit. My preference when using wine casks has always been to use fresh first fill barrels with a view to bottling the whisky relatively young. This approach means the lighter clean flavours and the fresh maritime peat smoke isn’t overwhelmed by the cask influence,”
It is time to have a wee taste.
Colour…Tuscan sun gold
Nose…Charming aromas of toffee, sweet vanilla, orange and lemon peel, stewed mixed fruit, encased in an enticing peat smoke.
Taste…On my palate the peat smoke is showing well, more vanilla, a wee citrus burst,
a puff of white pepper, mild spices are creeping in, honey on toast.
Finish…A delightful long finish, sweet peat smoke, a mixture of citrus and mild spice all sitting on a Whisky barrel stave.
This must be one of the best Kilchoman expressions I have ever tasted. As an Islay and peated Whisky lover this one ticks all the right boxes.
Priced at £69.95 this is one all Islay/peated/Kilchoman Whisky lovers must have in their Whisky cabinets.
Nicola and I will be over in Islay in early July and Kilchoman will certainly be on or must-visit distilleries. Looking forward to meeting everyone and having a wee taste of some of the newer expressions, we will probably leave with a bottle or three.
