An initial rush of fabrics, minerals, and coconut, then abundant ripe pineapple, bubble-gum, baklava, melon and runny honey. A spoonful of salty porridge and the fresh waft of cut grass. The nose was a pool-side feast of scallops fried in butter, aged prosciutto, olives and salted cashews, followed by crème caramel and lemon tart served on wood. The palate’s alluring sweetness balanced citric astringency – rose Turkish Delight and Ruffle bars (dark chocolate, raspberry and coconut) against stewed plums, with perfumed tobacco, wasabi and waxed wood….read more
53.3% ~ Re-Fill Spanish Oak Ex-Oloroso Hogshead ~ 23yo ~ Highland
A fabulously rich nose – molasses, toffee apples and Halloween treacle scones; raisiny sherry wine, leather and polished oak conveyed pure opulence. Aromatic campfire wood-smoke arrived on the palate, with sweet sherry, brown sugar and Nutella; tannic twists of liquorice, ash, cinnamon and oak to finish. The reduced nose was a Spanish menu of Jamon Serrano, quince jelly, Manchego….read more
