Flavour Escapism – The Scotch Malt Whisky Society release (outturn) several single cask bottlings of Scotch, Whisk(e)y, Rum and Gin, to name a few, usually on the first Friday of every month. Batch 19 – Frazzle Dazzle

50.0% ~ 1st Fill Tempest Smoked Barley Wine Hogshead ~ 13yo ~ £60.00

For this experimental batch, we teamed up with our friends at Tempest Brewery in the Scottish Borders. We commissioned Speyside Cooperage to create some new American oak hogsheads, with a heavy toast and a medium char. These hogsheads were then sent to Tempest, where they were filled with an off-the-wall smoked barley wine (think 12.5% ABV smoked stout!). After five months, the beer was bottled and the casks were filled with selected un-peated Speyside malts. 4.322 – Enchanted Pitch Pine and Blooming Heather

61.3% ~ 1st Fill Ex-Bourbon Barrel ~ 13yo ~ Highland ~ £69.30

We imagined carrying a two-bushel hessian sack containing peated barley from the kiln to the mill getting it ready for mashing. This was hard work and we needed replenishment in the form of cinder toffee, toasted almond cookies and slices of Brazil nut fruitcake. Following reduction, the scent was that of an enchanted coastal terrain of pitch pine and blooming heather with a delicate hint of sweet smoke, while to taste a crisp, fresh and slightly salty Manzanilla Sherry beautifully balanced by honey roasted pecans and smoked flavoured almonds. 16.70 – The Green-Fingered Blacksmith

63.5% ~ Refill Re-Charred Hogshead ~ 8yo ~ Highland ~ £54.00

26.205 – A Calming Presence

61.4% ~ 1st Fill Ex-Bourbon Barrel ~ 9yo ~ Highland ~ £58.60

Nosing this neat felt like a beautifully soft cashmere scarf was caressing our necks and keeping us warm as we walked along the beach on a cold, crisp morning. On the palate the scarf turned out to be a bit scratchier than we had initially thought, however still very pleasant and comforting like a smooth, sweet and spicy vanilla Chai black tea. Following reduction, we moved indoors and lit a candle with the soothing scent of palmarosa, lavender and ylang-ylang. The taste was honeydew melon balls with mint and ginger and rose hip syrup with homemade Scandinavian blackcurrant leaf cordial in the finish…. read more

35.318 – Spiced Hot Orange Juice

60.6% ~ 1st Fill Ex-Bourbon Barrel ~ 9yo ~ Speyside ~ £57.00

We prepared a hot sauce, West Indian style, with spice coming from the scotch bonnet peppers and fruity aromas from mango, pineapple and guava. Plenty of lovely esters on the palate neat with pear drops, foamy banana sweets and candied hazelnuts but, at the same time, a cinnamon spiced hot orange juice. Following the addition of water runny honey, roasted vanilla pods, American cream soda, coconut and oak shavings appeared while the taste had plenty of sweet goodness with jelly babies, milk bottle chews and pink wafers. 39.248 – Doing The Conga

61.9% ~ 1st Fill Ex-Bourbon Barrel ~ 10yo ~ Speyside ~ £57.00

Incredibly fresh and vibrant on the nose, like champagne bubbles rising from the bottom of the glass, but here it almost jumped for joy out of the glass! On the palate, juicy, fruity jelly babies, American cream soda sherbet (great for dipping) and a pink mint rock with a zingy mango and passion fruit jam in the finish. Water added aromas of peach iced tea, passionfruit parfait, blueberry smoothie and a melon ball medley before we enjoyed foamy shrimp sweets, butter icing, fairy cakes and jam roly-poly. 48.152 – Pull That Cork

60.4% ~ 1st Fill Ex-Bourbon Barrel ~ 9yo ~ Speyside ~ £53.10

We were lying amongst haybales in a barn with a pick n mix bag of penny sweets and white chocolate mice as we wrote a letter and sealed it in a Manilla envelope before cracking open a bottle of Portuguese Vinho Verde. These wines are known for their crisp acidity, lively sweet fruity flavours, and relatively low alcohol levels of around 10% making this a real refreshing slightly off dry style. Following reduction we enjoyed a peppermint tea, strawberry salad with basil and mint as well as a gooseberry fool, while to taste vibrant sweet red fruits, glazed doughnuts, and a surprisingly light lingering spicy note in the finish... read more

64.130 – Toast Rack

58.7% ~ 1st Fill American & European Oak Hogshead ~ 12yo ~ Speyside ~ £65.90

Cola syrup, toasted wood embers and BBQ sauce were all initially noted by the panel. Also mentholated oak tones, pine resins, fir wood, charcoal and charred brisket ends. Beyond that we also found some wine gums and incense. Reduction brought classical spices such as cloves, nutmeg and stem ginger in syrup. Smoky paprika, chilli jam and hessian too. 71.90 – Granny’s Biscuit Dungeon

63.0% ~ 1st Fill Ex-Bourbon Barrel ~ 8yo ~ Speyside ~ £45.60

A rich and heady aroma that heavily suggested malt load with sultana and chopped date at first. Also fig rolls, tobacco leaf, earthy potting shed vibes and heady summer flowers weighted with pollen. Water brought more left field aromas like plasticine, wintergreen, vase water and verbena. Indeed, it became altogether more medical with wintergreen and wormwood notes abound. The palate was initially richly bready and thick. Fresh brown bread, mentholated chewing gum, fennel, toasted pine nuts and Weetabix drizzled with golden syrup. 73.139 – Rose Petals and Peaches

62.8% ~ 1st Fill Ex-Bourbon Barrel ~ 10yo ~ Speyside ~ £61.20

We followed fragrant rose petals towards ripe bananas, white chocolate and juicy fruit salad with a dash of stem ginger and cayenne pepper. Flavours then encompassed dried papaya and sugar syrup with fresh mint and balancing wood tannins. Water unleashed an abundance of stone fruits with peaches, plums and nectarines while green grassy notes brought freshness. Delicate notes on the palate suggested camomile and hibiscus tea with brown sugar sprinkled on hot and creamy porridge oats. 134.14 – Jamaica To India

58.4% ~ Refill Ex-Bourbon Barrel ~ 5yo ~ India ~ £142.80

We felt there was a bit of West Indian flair in the air with Jamaican funky esters and plenty of spice – Chris Gayle playing for the Royal Challengers Bangalore in the IPL (Indian Premier League) scoring a fiery, fruity ton in 30 balls. At the break there was plenty of water but also triphala tea and a traditional pancake from the region of Goa called Alle Belle – a soft crepe-like outer layer filled with coconut and jaggery. 108.59 – First Breath of Spring

65.4% ~ 1st Fill Ex-Bourbon Barrel ~ 9yo ~ Speyside ~ £53.10

On the nose neat, this felt like spying the first snowdrops popping out above the snow indicating that spring should not be too far off. The aromas were as delicate, with lychees, iced gems and a frozen lemon sherbet. The taste followed suit; creamy, tangy sweet lemon flavours next to the first bite into a crisp green apple. Following the addition of water, the nose revealed Chardonnay aged in oak together with the aroma of ripe stone fruits, orange blossom, ginger and citrus zest.
