Shake Up Your Summer, Mix It Up – The Scotch Malt Whisky Society release (outturn) several single cask bottlings of Scotch, Whisk(e)y, Rum and Gin, to name a few, usually on the first Friday of every month. Sweet and meaty, like Frazzles and sweet chilli smoked pork scratchings and how about a marmalade made with Seville oranges smoked over ex-sherry cask wood used to mature peaty whisky. A fruity sweetness of apricot and plum jam was followed by apple crumble with prickly mulled spices and a hint of tobacco. A lot of heat but quite sweet like a shot of spiced apple rum liqueur which reminded us of stewed apples with a big kick of cloves and cinnamon. We imagined that after having picked the grapes in the steep sloping vineyards of the Douro valley, we poured them into a large stone tank (lagares) and then, synchronised to the rhythm of a local musician, we squashed them and squeezed the liquid out from the skin. The taste was opulent and sweet with an abundance of earthy, spicy notes and an elegant fine chewy tannin finish. A warm, inviting and rather dense sherry profile greeted the Panel at first nosing. Crème brûlée, caramel sauce, freshly dipped toffee apples, allspice, buttery shortbread and dark fruits stewed in armagnac. Some touches of fig compote and plum wine underneath. Reduction offered spiced mango lassi, rapeseed oil, leathery mineral notes, wild strawberry and tomato vine. A sweet, fruity scent filled the room – like walking through a vineyard just before the grapes are harvested, or an apple orchard with ripe red apples ready for picking. On the palate, we bit into one of those crimson skin-coloured apples with an interesting vinous, sweet flavour which reminded one panellist of a variety called Fameuse. We imagined a warm summer’s day walking on the beach promenade as we passed a florist just arranging the bouquets outside the shop, while next door someone enjoyed a steaming hot sweet porridge. An incredibly opulent and complex nose combined a plethora of toasted nuts with treacle, prunes and oily marzipan. Flavours evolved in a Darwinian multi-sensory kaleidoscope as chocolate-covered rum and raisin ice cream mutated into morello cherries, liquorice and dark treacle to create an entirely new species of spice-laden fruit. Where should we start; peat, soot and tar or a smoked herbal Martini cocktail or smoked blood orange, or treacle tart – certainly on the ‘dark side of the moon’ maybe even dragon blood incense! Smoked mackerel pate on a piece of Melba toast, Parma violets dropped into miso soup, lemon sprinkled on sardines on a barbeque and opening a bottle of a hoppy Pilsner. We were baking but instead of butter, we were using nut oils to make rye hazelnut chocolate chunk cookies and a pear, blackberry and coconut cake. A beautiful and deeply classical initial aroma of seawater, green olives, bath salts, rock pools, seaweed crackers, preserved lemons in brine and camphor laced with iodine drops. A young, punchy and immediately charismatic example of this left-field Highlander. We found the nose to be riddled with hessian cloth, lamp oil, old toolboxes, steel wool, young furniture, canvas, vapour rubs and mineral oil. Hints of young calvados and tart gooseberry. The Panel remarked on the stunning consistency of quality from this distillery. Another dazzling display of sweet, syrupy waxes, pineapple chunks dusted with shredded coconut and hessian sackcloth. A mysterious, slightly opaque, however deeply engrossing aroma, roasted pine nuts, treacle tart, balsamic strawberries, plums, figs and raisins. You must taste it yourself to believe it – coffee, caramel, nuts, dried fruits the list really could go on and on, an amazing sweetness but at the same time a relieving, surprising freshness. A roasty, malty and creamy aroma of cherry scones mingled with the scent of oaky vanilla sweetness from white chocolate, hazelnut and nutmeg tiramisu. Our taste buds were left intrigued by the contrast of salt and sweet as well as a hint of bitterness just like when sea salt is added to very dark chocolate. Apparently, one should never mix grain and grape but here grain meets grape in a fascinating array of aromas.
