SMWS 137.10

137.10 – Smoky, Sweetie, Meaty

64.7% ~ Re-Fill Ex-Bourbon Barrel ~ 8yo ~ Norfolk, England

Sweet and meaty, like Frazzles and sweet chilli smoked pork scratchings and how about a marmalade made with Seville oranges smoked over ex-sherry cask wood used to mature peaty whisky. The taste was big, dark and beautiful – ‘an explosion of purple smoke!’ When we added water it was like adding fuel to the fire (in a good way!) – sweet and sour glazed smoked pork chops….read more

SMWS 112.88

112.88 – The Godfather

58.2% ~ 2nd Fill Ex-Bourbon Barrel ~ 19yo ~ Highland

A fruity sweetness of apricot and plum jam was followed by apple crumble with prickly mulled spices and a hint of tobacco. A lot of heat but quite sweet like a shot of spiced apple rum liqueur which reminded us of stewed apples with a big kick of cloves and cinnamon. After the addition of water, we were served banana pancakes with apple ice cream spiced with nutmeg…read more

SMWS 108.32

108.32 – In A Rabelo On The Spey

59.2% ~ 2nd Fill Charred Ex-Red Wine Barrique ~ 13yo ~ Speyside

We imagined that after having picked the grapes in the steep sloping vineyards of the Douro valley, we poured them into a large stone tank (lagares) and then, synchronised to the rhythm of a local musician, we squashed them and squeezed the liquid out from the skin. The taste was opulent and sweet with an abundance of earthy, spicy notes and an elegant fine chewy tannin finish. Diluted we took a traditional rabelo boat down river sipping a glass of young vintage port…read more

SMWS 107.24

107.24 – Oven-Ready Moomin

59.8% ~ 1st Fill Ex-Sherry Butt ~ 8yo ~ Speyside

A warm, inviting and rather dense sherry profile greeted the Panel at first nosing. Crème brûlée, caramel sauce, freshly dipped toffee apples, allspice, buttery shortbread and dark fruits stewed in armagnac. Some touches of fig compote and plum wine underneath. Reduction offered spiced mango lassi, rapeseed oil, leathery mineral notes, wild strawberry and tomato vine. In the mouth, we initially noted the savoury richness of freshly baked brown bread, bananas flambéed with brown sugar….read more

SMWS 105.32

105.32 – Red Delicious

58.3% ~ 1st Fill Ex-Bourbon Barrel ~ 12yo ~ Speyside

A sweet, fruity scent filled the room – like walking through a vineyard just before the grapes are harvested, or an apple orchard with ripe red apples ready for picking. On the palate, we bit into one of those crimson skin-coloured apples with an interesting vinous, sweet flavour which reminded one panellist of a variety called Fameuse. After the addition of water, a wonderfully sweet perfumed floral aroma of roses….read more

SMWS 93.162

93.162 – Beer O’Clock

57.1% ~ 1st Fill Ex-Bourbon Barrel ~ 11yo ~ Campbeltown

We imagined a warm summer’s day walking on the beach promenade as we passed a florist just arranging the bouquets outside the shop, while next door someone enjoyed a steaming hot sweet porridge. We sat down at a pub overlooking the sea and had a half pint of a ‘wee heavy’– dark brown in colour, a thick foamy head and awash with caramel and a flavourful roasty character….read more

SMWS 72.103

72.103 – The Origin Of Spices

59.9% ~ 1st Fill Ex-Oloroso Hogshead ~ 13yo ~ Speyside

An incredibly opulent and complex nose combined a plethora of toasted nuts with treacle, prunes and oily marzipan. Flavours evolved in a Darwinian multi-sensory kaleidoscope as chocolate-covered rum and raisin ice cream mutated into morello cherries, liquorice and dark treacle to create an entirely new species of spice-laden fruit. Water created a primordial soup of custard and hazelnut praline….read more

SMWS 66.191

66.191 – Smoky Dark Cajun Roux

49.2% ~ 1st Fill Shaved, Charred & Re-Toasted Ex-Oloroso Barrique ~ 23yo ~ Highland

Where should we start; peat, soot and tar or a smoked herbal Martini cocktail or smoked blood orange, or treacle tart – certainly on the ‘dark side of the moon’ maybe even dragon blood incense! The taste was that of well charred bacon or in the deep American south, a New Orleans creole gumbo with a dark smoky cajun roux used as a thickening agent….read more

SMWS 53.362

53.362 – Party Warmer

56.9% ~ Re-Fill Ex-Bourbon Hogshead ~ 10yo ~ Islay

Smoked mackerel pate on a piece of Melba toast, Parma violets dropped into miso soup, lemon sprinkled on sardines on a barbeque and opening a bottle of a hoppy Pilsner. A wonderful sweet heat on the palate neat, charred prawns glazed with honey and marshmallows on a peat fire as we lit fire balloons with the Paps of Jura….read more

SMWS 44.140

44.140 – Spiced Cranberry Chutney Crackers

63.2% ~ 2nd Fill Ex-PX Hogshead~ 14yo ~ Speyside

We were baking but instead of butter, we were using nut oils to make rye hazelnut chocolate chunk cookies and a pear, blackberry and coconut cake. On the palate neat plenty of dry spiciness as we chewed on water crackers served with spiced cranberry chutney using pumpkin pie spice, black pepper and a dash of hot pepper sauce….read more

SMWS 35.294

35.294 – Willow Wood In The Sun

60.8% ~ 1st Fill Ex-Bourbon Barrel ~ 13yo ~ Speyside

The nose opened with juicy red fruits, pomegranate seeds, bouquets of fresh flowers and the fragrance of sandalwood. Beyond that we found citrus rinds, lemon barley water and vanilla foam. With water there was linseed oil on a new cricket bat, milk bottle sweets, marshmallows, cornflakes dusted with icing sugar and passion fruit sours….read more

SMWS 29.283

29.283 – Samuraislay

60.1% ~ 2nd Fill Ex-Bourbon Barrel ~ 9yo ~ Islay

A beautiful and deeply classical initial aroma of seawater, green olives, bath salts, rock pools, seaweed crackers, preserved lemons in brine and camphor laced with iodine drops. Beyond that: bandages soaked in white wine vinegar. Powerful, potent but controlled. With water, we found smoked cereals, burnt toast, salted butter with chopped parsley, scallops seared and wrapped with parma ham, anchovy paste….read more

SMWS 28.61

28.61 – Hot Potato!

60.9% ~ 1st Fill Ex-Bourbon Barrel ~ 7yo ~ Highland

A young, punchy and immediately charismatic example of this left-field Highlander. We found the nose to be riddled with hessian cloth, lamp oil, old toolboxes, steel wool, young furniture, canvas, vapour rubs and mineral oil. Hints of young calvados and tart gooseberry. Reduction brought out baking powder, cornflour, oatmeal, sandalwood, oily rags and old workshops….read more

SMWS 26.172

26.172 – Miso Splendido

60.6% ~ 1st Fill Ex-Bourbon Barrel ~ 8yo ~ Highland

The Panel remarked on the stunning consistency of quality from this distillery. Another dazzling display of sweet, syrupy waxes, pineapple chunks dusted with shredded coconut and hessian sackcloth. Then richly umami notes of brown rice miso, camphor, lime curds and white flowers on a pebble shoreline. Water teased out Turkish delight and young dry gewurztraminer….read more

SMWS 24.156

24.156 – Utterly Unctuous

63.7% ~ 1st Fill Ex-PX American Oak Hogshead ~ 12yo ~ Speyside

A mysterious, slightly opaque, however deeply engrossing aroma, roasted pine nuts, treacle tart, balsamic strawberries, plums, figs and raisins. You must taste it yourself to believe it – coffee, caramel, nuts, dried fruits the list really could go on and on, an amazing sweetness but at the same time a relieving, surprising freshness. A drop of water and an oriental perfume emerged out of nowhere to blend with an exquisite mouth-coating orange sponge….read more

SMWS 18.36

18.36 – Depth Of Flavour

57.9% ~ 2nd Fill Shaved, Charred & Re-Toasted Barrique ~ 13yo ~ Speyside

A roasty, malty and creamy aroma of cherry scones mingled with the scent of oaky vanilla sweetness from white chocolate, hazelnut and nutmeg tiramisu. Our taste buds were left intrigued by the contrast of salt and sweet as well as a hint of bitterness just like when sea salt is added to very dark chocolate. After dilution, we marinated a shark steak with soy sauce and prepared red onions roasted with balsamic and honey….read more

SMWS 10.219

10.219 – Water Into (Smoky) Wine

60.1% ~ 2nd Fill Ex-Oloroso Ex-Islay Hogshead ~ 7yo ~ Islay

Imagine being slapped in the face with a thick, whole rolled pancetta – salt cured, smoked and dried – I think you get the picture! Wow – peated smoked honey, smoked sea salted caramel, smoked scallops dropped into ash and in the finish, coastal antiseptic. Water turned it into a smoky deep red wine, a top-class northern Rhone Syrah from the appellation Côte Rôtie….read more

SMWS 4.279

4.279 – A Work Of Finesse

62.8% ~ 1st Fill Ex-Bourbon Barrel ~ 11yo ~ Highland

Apparently, one should never mix grain and grape but here grain meets grape in a fascinating array of aromas. Smoked champagne cork as well as pinot blanc wine matured in a ‘peaty-whisky’ cask, the result simply stunning! The fresh aroma of citrus and floral meadows was interwoven with a fine spicy and smoky scent. On the palate, a delight. A perfect combination of sweetness, fruitiness and smoke….read more

SMWS 3.322

3.322 – Pirates From The Hebridean

56.8% ~ Re-Fill Ex-Guyanese Rum Barrel ~ 17yo ~ Islay

All the panellists muttered “floral, feisty, funky, fruity?” The chairperson started to fume, but we all thought it was fabulous! On the palate there was no doubt where this dram came from, we might be cruising in the Caribbean Sea but clearly Islay was steering the ship – lime and mango dark chocolate with chipotle and heavily smoked sea salt….read more

SMWS 2.128

2.128 – Navy Strength Sherry

56.2% ~ 1st Fill Ex-Oloroso Butt ~ 13yo ~ Speyside

Classic aromas of hazelnuts, roasted chestnuts and raisins created a familiar mix with cinnamon, nutmeg and bruised apples. Then tobacco and soft leather merged with dried herbs before the palate brought a rich and spicy sweetness. Flavours took us from almonds, walnuts and coconut husk to dried orange and burnt toffee….read more
