SMWS 115.20

115.20 – The Upside-Down

45.5% ~ 1st Fill Ex-Bourbon Barrel ~ 26yo ~ Speyside

A surprisingly youthful and fresh nose, full of readily muddled green herbs, garden flowers, ginger beer, rosehip tea and chamomile. A nibbled of white pepper alongside golden syrup and lychee. A big dollop of pineapple jelly too. Reduction brought putty, horseradish and other spicy things. Some fresh cigarette papers, cornflour, chamois leather and lightly honeyed porridge….read more

SMWS 10.207

10.207 – Wa-Wa-Woom!

55.9% ~ Re-Fill Ex-Bourbon Barrel ~ 12yo ~ Islay

We needed to call the fire brigade as a garden shed full of paint pots, newspapers, old chipboards and plywood had just gone up in smoke. Someone had the idea, as Shakespeare vaguely said, “fight fire with fire” while others foolishly poured fuel onto the fire. Finally water did the trick and we relaxed by the sea, where nearby someone was roofing…read more

SMWS 72.96

72.96 – Honey Begins With A Flower

57.4% ~ 1st Fill Ex-Bourbon Barrel ~ 9yo ~ Speyside

A sweet and floral scent awakened us to raindrops falling on cherry blossom and cornfields, before kicking dust onto hidden wild strawberries as the drops splashed onto the ground. Sugary notes then appeared of sticky jam and honeycomb combined with creamy fresh milk. On the palate came apple strudel covered with maple syrup and drizzled with brown sugar, fresh ginger…read more

SMWS 125.78

125.78 – Refined Rancio

57.1% ~ 1st Fill Ex-Pedro Ximenes Barrique ~ 15yo ~ Highland

This was almost sensory overkill, but we managed! Overripe pears and plums, musky and woody, tobacco, floral and nutty – we imagined being in a perfume laboratory in Grasse. The taste neat was silky and rich, gentle and refined as well as oaky and creamy, like a chilled glass of white Bordeaux wine, lemon, peach, apricot and herbaceous notes of bergamot….read more

SMWS 53.371

53.371 – Hard Hat Dram

57.1% ~ Re-Fill Ex-Bourbon Hogshead ~ 11yo ~ Islay

Sniffing this, you could be underground in an old salt mine, with abandoned machinery – definitely a hard hat dram. Pears poached in peated malt give way to candied lemon and lime, with distant eucalyptus. The palate hints at two-stroke fuel, iron filings and coal, followed by a carbolic mouthwash, but also has cotton candy, cloudy cider, seaweed, pine resin and peppery….read more

57.8% ~ 1st Fill Ex-Sauternes Barrique ~ 11yo ~ Highland

We were making apricot jam, using a hot copper pan, while we enjoyed a glass of Pinot noir wine with the typical flavours of mushrooms, truffles, all slightly earthy and leathery as well as plenty of spice – cinnamon, caraway and rosemary. With water fruity aromas of cherries, strawberries and ripe tomatoes were entwined with the herbal scent of rhubarb, beetroot and black olives…read more

63.3% ~ 1st Fill American Oak Ex-Pedro Ximenes Hogshead ~ 12yo ~ Speyside

The smell was initially like opening a jar of candied pitted olives and cherries in sweet sherry. The cherry theme continued with cherry Bakewell tarts, cherry lips and fizzy cherry cola bottle sweets. The taste was something special; raisin concentrate, fig syrup and prunes in a sweet dark bitter chocolate sauce. Water added sticky toffee pudding…read more

28.52 – A Sauce Of Fascination

59.0% ~ 1st Fill Ex-Bourbon Barrel ~ 8yo ~ Highland

35.285 – The Viscometrist’s Secret Cream Fridge

59.6% ~ 1st Fill Ex-Bourbon Barrel ~ 8yo ~ Speyside

Surprisingly mature for its age we all agreed. An initial flood of Juicy Fruit chewing gum, exotic bubble gums, vanilla custard slices, custard cream biscuits, pollen-heavy lilies, rosewater and sweet young Gewürztraminer. Reduction gave us the beery richness of heather ales and old-school schilling beers, alongside linens, sweet cough medicines and cardamom custard…read more

4.265 – Sea Breeze And Lime Trees

57.4% ~ 1st fill Ex-Bourbon Barrel ~ 11yo ~ Highland

We were working with a traditional hand-operated cider press in a dunnage warehouse when we got served steaming hot freshly brewed coffee. 53.9% ~ Re-Fill Ex-Bourbon Hogshead ~ 29yo ~ Islay

“Gorse, beautiful – the yellow flowers of gorse in full bloom, the epitome of gorse!” It reminded us of a Rod Stewart song he performed with the Temptations in the year that sample was distilled – “bring over some of your old Motown records”.
