1.263 – Soft or Stiff Peaks?
58.5% ~ 1st Fill Ex-Bourbon Barrel ~ 9yo ~ Speyside ~ £61.20
In our mind’s eyes we saw lemon sorbet, shortbread, pineapple tarts, custard cream but the descriptor from one panellist, which certainly topped the bill for being the most imaginative, was “whipped egg whites and sugar known as ‘stiff peaks’, like the top of the newly built hotel in the St James’s centre in Edinburgh” (although also known by a far less favourable comparison!)…. read more
5.101 – Banana Pepper
56.4% ~ 1st Fill Ex-Bourbon Barrel ~ 18yo ~ Lowland ~ £100.80
We all came up with descriptors which were yellow such as lemon bonbons, apricot wine, pineapple tarts, hay, marigold and stem ginger. On the palate, almond oil, sheets of marzipan, candied hazelnuts, summer fruit cordial and those chewy sweet lemon bonbons, which have a surprising spicy centre. Following reduction, the yellow theme was still there, but now in the form of a banana milkshake…read more
6.46 – Living Carefree
57.0% ~ 2nd Fill Ex-Bourbon Barrel ~ 11yo ~ Speyside ~ £53.40
This one was all about lemons –fresh lemon sorbet, sherbet sours, lemon curd, limoncello, lemon zest cookies and warm lemon pudding cake. We lay on the grass chewing on a single blade gazing up at the sky while day-dreaming, living carefree! Diluted we decided to take a wooden deck chair, put on some coconut sun cream and with the light breeze carrying the delightful scent of nearby flowerbeds… read more
6.54 – A Two Stage Stonker
58.1% ~ 2nd Fill Ex-Bourbon Barrel ~ 12yo ~ Speyside ~ £57.10
This nose combined savoury and woody impressions, like charcuterie on wooden serving boards or ‘pulling nori from miso soup with wooden chopsticks’ – it also had citrus fruits, iced gems and rhubarb rock. The palate was a two stage stonker – zingy and citric (lemon and lime sweets, unripe plums, apple strudel) with spicy warmth later (sweet chilli, cinnamon, clove, five spice)…read more
9.236 – Cinnamon Snickernoodles and Sanded Pine
58.0% ~ 2nd Fill Ex-Bourbon Barrel ~ 13yo ~ Speyside ~ £65.00
Delicate, floral and easy-going, the nose whispered rumours of pecan pie, pears Belle Helene, crystallised orange, sugared almonds, honey and butterscotch – maybe hints of pipe tobacco in a laundry. The palate proved zingy and mouth-drying, with tangerines and lemon tart, hazelnuts, coffee grounds and stem ginger biscuits, chewed pencils and chilli…read more
13.91 – A Colorful Companion
60.0% ~ 2nd Fill Ex-Bourbon Barrel ~ 9yo ~ Highland ~ £60.00
Nosing neat the colour ‘yellow-orange’ came to mind with pictures of mango flavoured Turkish delight, saffron, peeling a satsuma and lemon butter biscuits. Turning greener on the palate we were reminded of a pistachio cake with matcha green tea, green peas and kombu (Asian seaweed) and green sweet jalapeno jelly chilli sauce. After reduction, the lovely sweet and creamy scent of lemon balm developed…read more
13.96 – A Pinch of Pink Peppercorns
65.6% ~ 1st Fill Ex-Bourbon Barrel ~ 9yo ~ Highland ~ £59.10
We made Belgian waffles with melted white chocolate, vanilla ice cream and coconut flakes as well as almond tartlets with a plum cream and pineapple cubes. A robust taste neat of wood, leather and tobacco was complimented by a sweet and spicy orange liqueur, finishing with dark cherries soaked in brandy, muscovado sugar and tarragon to which we added a pinch of pink peppercorns…read more
105.36 – It’s A Farming Life For Me
60.7% ~ 1st Fill Ex-Bourbon Barrel ~ 13yo ~ Speyside ~ £59.20
We imagined, having collected bales of hay in a horse-drawn wooden wagon, that we were now sitting on top to head back to the farm while enjoying our well-earned break eating black figs, Parma ham and drinking cider from a wineskin. On the palate we cranked-up the dial with a shot of apple schnapps but there was also a spicy heat like that of an apple…read more
26.200 – Oranges On Our Mind
61.3% ~ 1st Fill Ex-Bourbon Barrel ~ 9yo ~ Highland ~ £58.70
Somehow, we felt like we’d been tango’d – orange liqueur, orange wine, orange rind diffuser and orange jellybeans before notes of butterscotch and banana bread appeared. Spicier to taste than we all expected. More of a slap then a kiss, but then also a lovely sweetness like jalebi, crisp orange squiggles soaked in sugar syrup and spiked with cardamom and saffron. With water, a chutney or jam made from Cape gooseberries appeared, while to taste there was the freshness and juiciness of a mango and passion fruit salad with lime sorbet and pomegranate seeds…read more
28.73 – Porridge of Dreams
61.0% ~ 2nd Fill Ex-Bourbon Barrel ~ 9yo ~ Highland ~ £52.00
The neat aroma suggested pear tarts, muddled green herbs, underripe cooking apples, foaming stout and fizzy lemon sherbet. A charismatic and playful young highlander. With water it got spicier and showed notes of putty, sunflower oil, bakelite, cinder toffee and bakewell tart. The palate initially displayed sweet waxes, lemon cough drops, heather honey, ginger syrup…read more
35.279 – Greeted With A Big Smile and Open Arms
60.2% ~ 1st Fill Ex-Bourbon Barrel ~ 17yo ~ Speyside ~ £84.20
It was like being welcomed with a big smile and open arms – honey, melon, pineapple and vanilla next to warm cinnamon swirls and a whiff of fruit jam hookah tobacco. On the palate luscious mango arrived first soon followed by honey candied chilli ginger, salted toffee, fresh oak and in the finish dark bittersweet chocolate. With the addition of water banana chips, coconut flakes and apricot jam were revealed as we uncorked a very old wine bottle…read more
35.313 – Indian Restaurants, Humidors And Fruit Stalls
59.7% ~ 1st Fill Ex-Bourbon Barrel ~ 9yo ~ Speyside ~ £57.00
Initially shy and then just elegant, the nose, over time, volunteered musky perfume, polished furniture, apple turnovers and pear Belle Hélène, black bun, treacle, humidors and barber shops. The palate went from simply sweet (Trebor fruit salad chews, bourbon biscuits, dark chocolate) to the spicy sweetness of cinnamon Oddfellows or lucky tatties; the finish followed with restrained tingles of gooseberry…read more
39.219 – Sweetness, Spice And All Things Nice
63.7% ~ 1st Fill Ex-Bourbon Barrel ~ 12yo ~ Speyside ~ £62.00
On the nose, we got a cream soda ice-cream float, toffee apples and Madeira sponge, cherry pieces in dark chocolate, tea chests, cigar boxes, old wooden desks and leather books. The initial palate delivered panna cotta and golden syrup, white pepper, ginger and liquorice – evolving into tart confectionery like cherry lips, sour apple chews and sherbet lemons…read more
39.243 – Packs A Sweet Punch
60.7% ~ 1st Fill Ex-Bourbon Barrel ~ 10yo ~ Speyside ~ £57.00
A lovely fruity sweet aroma greeted the panel, apricots, peaches, pears as well as cherry menthol lozenges and Parma violets. On the palate neat, a light, fresh, sweet and fruity Mirabelle schnapps made from fully ripe Mirabelle yellow plums and arepa di pampuna (traditional pumpkin pancakes from Curacao). The addition of water released the scent of freshly cut grass before strawberry jam…read more
48.116 – A Wee Powder Keg
57.3% ~ Refill Ex-Bourbon Barrel ~ 13yo ~ Speyside ~ £59.20
We found this one to be much lighter initially than weve come to expect from this distillery. Very crisp and cereal driven with some ethereal fruitiness – vitamin tablets fizzing in mineral water, mango peel and lemon ironing water. Also lots of starched linens, turmeric earthiness and things like lanolin, lemon pith and wee hints of pickled ginger. With water it became more herbal with dried sage, sorrel and some fragrant sandalwood…read more
48.134 – Secret Snacks In The Wardrobe
61.1% ~ 1st Fill Ex-Bourbon Barrel ~ 17yo ~ Speyside ~ £75.00
With time and patience the nose discovers blackberry pie with nutmeg and cinnamon-sprinkled custard, chocolate-dipped candied orange, brandy snaps and old red roses lying on polished wood. The palate has marrons glacés, coffee creams and marzipan lebkuchen; then the finish warms up with crystallized ginger, hints of wood, whispers of leather and wasabi tingles…read more
48.150 – A Day At The Beach
60.0% ~ 1st Fill Ex-Bourbon Barrel ~ 9yo ~ Speyside ~ £49.80
Mmm – an interesting nose – pencil cases and apothecary’s shelves, brandy snaps, cinnamon stick, gingerbread, clove-studded orange and Fisherman’s Friends. The palate was chalky and sweet – chocolate, carob, pralines and rum truffles, with some affable warmth on the finish – tobacco strands, pickled ginger and wasabi. The reduced nose was airy and fresh…read more
55.64 – Vibrant and Thermogenic
61.5% ~ 1st Fill Ex-Bourbon Barrel ~ 9yo ~ Speyside ~ £52.00
The nose was slightly unusual – not the vanilla custard, cereal notes, fruit pastes or white pepper and candied fennel seed warmth, but hair styling wax and eucalyptus muscle rub raised eyebrows. The neat palate had vibrant, zesty sour lemon and red chilli heat dancing on our tongues – hints of banana, white chocolate and Madeira cake too…read more
55.72 – Grown-Up Indulgences
58.1% ~ 1st Ex-PX Hogshead ~ 12yo ~ Speyside ~ £69.60
We remarked on the shiny auburn colour as one panellist dreamed of driving an original Porsche 911, complete with leather upholstery, wooden dashboard and steering wheel with aluminium poles. The taste came as a slight surprise, dark – but not pitch black – like Pontefract cake with hints of tar and ash…read more
68.79 – Translantic Tannin
60.3% ~ 1st Fill Custom Toasted Barrique ~ 13yo ~ Highland ~ £61.20
Initially we got creamy coconut macaroon, milk chocolate, wood spices, winter mulling spices, hessian, natural tar, creamola foam, caramelised pears and long aged orange liqueurs. We agreed that the combination of woods from the unusual cask type really worked well here. Water brought out red liquorice, flambeed banana, cookie dough and Belgian waffles with whipped cream. In the mouth this one was initially very spicy with grippy…read more
72.108 – Gobstopper
63.1% ~ 2nd Fill Ex-Bourbon Barrel ~ 10yo ~ Speyside ~ £51.00
The neat nose confirmed to us that this distillery often produces a deceptively weighty distillate. We got big aromas of wet plaster, chalk duster, starched linens, lemon verbena, stone fruits and tonic water. Some water brought out lychee cordial, lemon meringue and rich barley sugars. Also creamed coconut and eucalyptus oil. The neat palate showed a nicely thick texture with milky ice cream…read more
100.33 – Chamoy From Mexico
59.8% ~ 2nd Fill Ex-Bourbon Barrel ~ 14yo ~ Speyside ~ £63.90
The aroma reminded us of a Vermouth from Jerez based on a blend of Amontillado and PX Sherry and of course with the addition of herbs, fruits and of course, wormwood. Velvety soft and sweet on the palate but with a distinctive note of aniseed and gentian as well as a spicy tobacco finish…read more
