3.340 – Post-Sauna Seafood Platter

57.9% ~ 2nd Fill Ex-Bourbon Hogshead ~ 18yo ~ Islay ~ £129.60

This rather delicate nose had us tumbling out of a sauna to enjoy a feast of langoustines and smoked lobster with rye bread, marie rose dipping sauce and lemon wedges. On the palate, that characteristic perfumed smoke seduced us with potpourri and rosewater, melon, pineapple and cloudy apple juice; the finish had charcoal and mint, hints of rancio and blowing smoke rings from herbal cigarettes. The reduced nose was a fresh, breezy coastal walk, amply rewarded with gravadlax and custard doughnuts... read more

4.324 – Seashore Shenanigans

59.5% ~ 1st Fill Ex-Bourbon Barrel ~ 13yo ~ Highland ~ £69.40

The nose evoked shredded twigs and leaves and well-fired almond croissants enjoyed among the sand dunes. The palate had dried kelp and smoked sea salt, chocolate limes and a background gristy, bran flake cereal note. The reduced nose echoed this with rich tea biscuits and grain sacks, but also heather flowers and aloe vera bath salts. The palate developed dark chocolate with caramel and sea salt, coal dust and ash, herbs flaming on the barbeque and a white pepper finishread more

12.62 – Heaven-Sent

57.9% ~ 1st fill Ex-Pedro Ximenes Butt ~ 31yo ~ Speyside ~ £385.00

An aroma of incense of the most valued scented aloeswood which noblemen of the ancient Japanese imperial court called ‘Kyara Kongo’ and translates into ‘Diamond Kyara’ filled the room. On the palate somewhat heavy and dark but at the same time fruity and light as we envisaged watching the show ‘How the Andalusian Horses Dance’, an equestrian ballet accompanied by Spanish music in the Royal Andalusian School in Jerez. With a drop of water, we imagined the beating wings of a hummingbird, gracile, filigree, a playful elegance and seemingly without the slightest effortread more

134.8 – Spice Up Your Life!

60.2% ~ 2nd Fill Ex-Bourbon Barrel ~ 5yo ~ India ~ £145.00

We were immediately transported to Chandni Chowk in the heart of old Delhi with stalls full of spices, dried fruits, silver jewellery and vividly coloured Indian saris. On the palate neat we discovered plenty of cloves, cinnamon, dates, figs and nuts leaving us with an incredibly rich mouthfeel similar to eating halva. With the addition of water aromas of vanilla pods, liquorice, sweet candy, Turkish delight next to pipe tobacco in a leather pouch appearedread more

64.128 – Tradition Vs. Modernity

58.3% ~ 1st Fill American & European Oak Hogshead ~ 12yo ~ Speyside ~ £63.90

A massive hit of caramelised banana notes greeted the panel, and as they settled down, we baked sun-dried tomatoes in the oven. We enjoyed a mulled wine with allspice, cinnamon, cloves and orange zest and a slice of traditional Dundee cake made with raisins, almonds, orange zest and Seville marmalade. With just a drop of water, dark marzipan and chocolate rice pudding made an appearance. On the palate, pear chutney with red wine, chestnuts and lemon thyme, while in the finish there was a traditional mince pieread more

95.66 – Dali-Esque Bodega Landscape

55.6% ~ 1st Fill Hogshead ~ 16yo ~ Speyside ~ £90.80

After 13 years in ex-bourbon wood, we transferred this into a first-fill American oak PX hogshead. On the nose, red apple and walnut morph into cherries, raisins and prunes, eventually resembling a Dali-esque landscape where treacle melts over a bodega. The palate develops prunes, dates and figs, accompanied by croissants smeared with Nutella. The reduced nose finds chocolate-coated raisins and sultanas, browned butter and caramelised sugar – citric notes also emerge (orange blossom, blood orange)read more
