A voice from high up the mast yelled “fruit ahoy!” as mangos, pineapples and bananas bobbed past the bow and coconuts collided with the hull. Eye patches at the ready we fished out green papayas and stowed them below with casks of rich honey, sticky syrup and angelica root. The air carried an earthy funk with hazelnuts….read more

66.9% ~ 2nd Fill Ex-Bourbon Barrel ~ 7yo ~ Jamaica
Our noses confronted a firecracker fusillade of funk – stewed fruits (prunes not plums) and leather (razor strop soaked in Brylcreem); then a floral fracas flared – one panellist got gardenia blossoms and dried palm leaves, another ferreted out C.P. on a gooseberry bush and funeral parlour plastic flowers. A robust and powerful nose introduced juniper, linseed oil and angelica root before orange and pink grapefruit made way for coriander, fennel and black pepper. The palate was fragrant with an abundance of rose petals and Parma Violet sweets merging with lemon sherbet, fresh orange juice and vanilla ice cream. A big nose of sweet buttery biscuits and shortbread merged with apples, peaches and pears while delicate floral aromas suggested lilacs and honeysuckle. Syrup textures and melted white chocolate coated the palate as pears poached in rum brought a spicy warmth and hints of molasses on marshmallows, vanilla ice cream and oak. A conventional start of green meadows, lush woodland and gooseberry bushes merged into treacle, toasted oak and tinned fruits in syrup. On the palate however, we found ourselves chasing a deceptive ninja armed with wasabi that danced from dry pear skins and tart crab apples to chocolate chip ice cream, coconut and caramel sauce, before disappearing back into minty bitter chocolate….read more

A variety of aromas came to mind when nosing neat; malted milk biscuits, chewy toffee, mint eclairs, salt and sweet popcorn, caramel custard and strawberry laces. Mouth-coating spiced rum punch with a good balance of sweet fruitiness like barley water orange squash. The nose neat had plenty of goodness with fig rolls, treacle tarts, roasted hazelnuts, candied tarragon, and sweet Medjool dates while on the palate dark chocolate pralines with a cinnamon-cardamom-chilli ganache melted in our mouths as we stared into the dark starless night sky and the big full moon. After reduction, a tarry sweet sherry note appeared before the scent of caramelised bananas….read more

The panel were initially taken somewhat aback by the aroma, which was more reminiscent of a lighter old school highland dram at first. Lots of plasticine, baking soda, bread dough, sunflower oil, minerals, chalk and limestone. Also dried tarragon, menthol and warm, freshly malted barley. Soft but bold in character. We rubbed a magic lamp and following a sweet, perfumed smoke, the genie appeared in the form of walnut oil, polished oak and smoked bourbon ice cream. On the palate, albeit briefly, we surprisingly found ourselves in Dante’s Inferno where we met a minotaur but were thankfully rescued by a salty sweetness….read more

Sweet and fragrant smoke engulfed lavender and heather within sight of the sea as oily mackerel, anchovies and shellfish were joined by roasted chestnuts and praline. A big and robust nose greeted the panel. Dark chocolate, freshly toasted wood, BBQ embers, marzipan and flowers in a hot greenhouse. Beyond that, we also found crystallised ginger, whittled pencils, hot shoe polish, putty and dried tarragon. The Panel initially suggested this may as well be cask aged bananas. A big, inviting morass of bananas baked with brown sugar, blood orange cocktails, cranberry jelly and then deeper notes of beery rarebit, game pie and waxy grease. We imagined an old fashioned, antique, solid mahogany wood secreter and as we opened a drawer, we discovered an immaculate set of silver cutlery freshly cleaned and polished while in another drawer, we found a vintage Italian leather writing pad. First, we noticed the gorgeous colour which was followed by the slow-moving think oily legs when swirling the glass a little. A rather dry and punchy aroma at first, we noted. Lots of starchy linen cupboards, ironing water, vases full of drying flowers, subtle sooty notes and things like carbon paper, crumbling vanilla biscuits and dried apple rings. The waxy fragrance of scented candles formed around cinder toffee and limoncello as oranges, coconut and marzipan settled onto sawdust and polished oak. The palate however greeted us with a burst of mango, melon and peach covered in thick cream while clove and aniseed joined flambeed banana and papaya with a squeeze of lime. Oh yes, a great pick me up, as we made a spiked Spanish coffee, dampening the rim of the glass with lemon wedges before dipping into sugar. Then we poured warm Cointreau into the glass and ignited it before we added brandy, coffee and Tia Maria, before topping with a dollop of whipped cream. The nose pricked our imaginations – evoking smouldering leaf bonfires, ‘tarpaulin-covered railway sleepers on low-loader and a firewalker’s sneakers’, charcuterie and venison cooked in red wine vinegar. The palate conjured hickory wood smoke, charred bacon and burnt marshmallows; also ‘licking a barber’s razor strop’, tar, aniseed and the scrapings of a burnt curry pot. A fruity and fragrant carnival invited mango, melon and grapefruit alongside gooseberries and apple pie for a night of dancing on cinnamon, Brazils and vanilla sponge cake. The palate embraced us with chilli heat that said “I yi yi yi yi, I like you very much!” before honey and hard toffee stole a dance to the tune of lemons, tart plums and oaky tannins. Big bonfire smoke surrounded green apples, brambles and limes while savoury aromas developed into salted pretzels and herbs. The Panel found a wonderfully oceanic aroma, full of sea breezes, crushed seashells, chalky medicines, coal scuttles and zingy citrus piths. This gave way over time to petrol puddles in a forecourt, wet bracken and a puff of tarry smoke. Reduction brought dried tarragon, anchovy paste, turmeric and smoked olives in pickling juices. A sublime olfactory experience which took us all to different places. Bramble jam and engine oil, smoked lobster in clarified butter and a pulled chicken burger with barbeque sauce. On the palate an amazing, sweet smoke, blackberry and blackcurrant jam infused with violet liqueur, flaked smoked almonds and peppermint icing.
