Eerie-Sistable Drams – The Scotch Malt Whisky Society release (outturn) several single cask bottlings of Scotch, Whisk(e)y, Rum and Gin, to name a few, usually on the first Friday of every month. GN6.2 – Old Timey Sippin’ Gin!

49.3% ~ 1st Fill Ex-Bourbon Barrel ~ 1yo ~ Edinburgh ~ £45.75

A soft and fruity aroma full of lemon and lime sorbets, freshly picked raspberries, trampled nettles and juniper with a tang of marzipan. Some water revealed pot pourri, cinnamon bark and cucumber peel. A lightly smooshed dock leaf maintained this elegant note of greenery. The mouth initially rather floral with violets and pink grapefruit. Some assorted citrus peels, apple pips and lemon bonbons. Reduction gave us honey with lemon rind, a particularly punchy hot toddy with bergamot and wintergreenread more

Batch 18 – Marmalade Overdrive

On a cold spring morning, we journeyed across the bridge to the Kingdom of Fife. Our mission? To nose and select some freshly imported Australian Shiraz barrels, of course! Alongside the experts from Nebb Whisky Barrels, we made our selections and went about identifying suitable whiskies to fill into the casks. We opted for some 11yo 1st fill bourbon matured Speyside whiskies. They were left to slumber for around three years before being blended to create this unique whiskyread more

3.343 – A Welcome Home Hug

56.4% ~ 2nd Fill Bourbon Hogshead ~ 18yo ~ Islay ~ £129.50

We jived all night among sweet perfumes on a polished jazz joint dancefloor; then gratefully enjoyed lavender-scented foot rubs and rose and violet dark chocolate creams from someone who stubbed out yenidje cigarettes in a wooden ashtray. The palate was a welcome home hug – Granny’s perfume, hickory wood smoke and embers, lapsang souchong, orange blossom and sea shore – with a teasing light astringency on the finish. The reduced nose had us floating in a wooden boat on an Islay lily pond, with maltings smoke and sea breezes in the distance. 4.326 – Smoked Haddock Souffle And Vanilla Honey Cupcakes

60.7% ~ 1st Fill Ex-Bourbon Barrel ~ 14yo ~ Highland ~ £69.40

The Panel mentioned a lot of smoke nosing this one neat, but the descriptors were all very delicate – smoky almonds and bacon rashers, smoked haddock soufflé and Lapsang Souchong tea. On the palate, Cantonese salt and pepper squid, fried calamari tossed in a mixture of honeyed stir-fried garlic, ginger and green peppers. Water added the freshness of soothing honey with a hint of peppermint on toasted bread, while to taste there was lightly smoked mint tea and slightly burned vanilla honey cupcakes. At nine years of age, we combined selected casks from the same distillery. We then returned the single malt into a variety of different casks to develop further. This is one of those casksread more

9.257 – Perfumed Tropicality

53.6% ~ 1st Fill Ex-Bourbon Barrel ~ 18yo ~ Speyside ~ £100.80

Shy at first, the nose suggested nettles, rosemary and forest floors – but giving it time paid off as perfumed notes of potpourri, red apple, orange boxes and flor de azahar (orange blossom, supposedly an aphrodisiac) emerged. The palate combined subtle flavours of sugared jelly fruits and cherries in crème anglaise, plus hints of sandalwood and toasted sesame seeds; the finish teased with delicate spice (cinnamon, cardamom) and coconut. The reduced nose grew more tropical – melon, passion fruit and strawberry, florentine tuiles and perfumed tobacco. On the palate, we now found jam tarts, lemon meringue pie, butterscotch, dark chocolate and dried mangoread more

19.84 – Under An Apple Tree – That’s Where I Want To Be

52.8% ~ 1st Fill Ex-Bourbon Barrel ~ 19yo ~ Speyside ~ £106.20

This was like sitting in a garden under an apple tree, drinking lemonade and enjoying the smells of jam-making coming from the kitchen window. The palate was sweet, fruity and citric (cranachan, lemon tart, jelly chews and fruit salad with a dash of orange triple sec). The reduced nose combined meringues and vanilla bonbons for sweetness, some biscuity cereal notes, light citrus, cinnamon, ginger and ash from a bonfire of rosemary and thyme. The palate now had a delightful sweet and tangy combination of marmalade on toast, damsons and apple cider, followed by buttered cinnamon raisin bagels and oatmeal biscuits with chai tearead more

35.326 – Emergency Whisky!

59.6% ~ 1st Fill Ex-Bourbon Barrel ~ 9yo ~ Speyside ~ £57.00

Initial nosing suggested to us the cask was slightly more dominant in this instance. Some lovely and cosy notes of banana syrup, warm fudge, toffee apples and new shoe leather were detected initially. Then meadow flowers heavy with pollen and fruity shilling beers. Reduction brought out pear drops, lychee sorbet, barley water and hessian cloth. The neat palate displayed rhubarb rock, lemon sherbet, banana bread and softer herbal and peppery tones that became more mentholated with time. 36.193 – Juggling Oranges In A Humidor

57.2% ~ 1st Fill American Oak PX Hogshead ~ 12yo ~ Speyside ~ £70.25

After nine years in ex-bourbon wood, we transferred this into a first fill American oak PX hogshead. The nose combined three-fruit marmalade tartness with earthier rewards (golden sultanas, apricot jam, stewed plums, figs in brandy). The palate progressed from blood orange and vanilla ice cream to dark chocolate and thick-cut marmalade on burnt toast, before finishing with leather, tobacco and hot toddy with cinnamon and clove. The reduced nose had cherry vanilla cola, toffee apples, exotic woods (sandalwood, teak) and hints of a humidor. The palate remained chewy and mouth-coating, with flavours of gingerbread and candied orange dipped in dark chocolate, and cheeky spices warming the finish… read more

46.126 – Sweeties In The Forest

55.4% ~ 2nd Fill Ex-Bourbon Barrel ~ 12yo ~ Speyside ~ £57.10

After nine years in ex-bourbon wood, we transferred this into a first fill American oak PX hogshead. 61.1% ~ 1st Fill Ex-Bourbon Barrel ~ 10yo ~ Speyside ~ £61.20

The neat nose on this one suggested fizzy sweets, young dessert wines, pineapple jelly, mango puree and bubblegum. We also noted apple sours, cider apples, wood char and baked pears. With water we got apple pie with custard, geraniums, oak shavings, menthol eucalyptus notes, bergamot and firmer notes like mineral oil, sunflower seeds and hand lotion. The neat palate opened with wild green herbs, zingy citrus, sandalwood, vanilla cream soda, creme caramel and limoncello in tonic water. Reduction brought out butter icing, mini milk ice lollies, strawberry milkshake and elderflower cordial. Some warm white pepper, juicy fruity chewing gum and vanilla custardread more

48.111 – Baking In The Potting Shed

61.8% ~ 1st Fill Ex-Bourbon Barrel ~ 9yo ~ Speyside ~ £45.60

The panel were taken aback by the maturity of this one. A rich fabric of sour pineapple sweets, hubba hubba tropical gum, mentholated wax, fir liqueur, herbal resins, spiced tomato chutney and camphor. With water the nose offered up stone fruits such as peach and nectarine, along with polished green apples, lemon and poppy seed cake, sweet flapjack, vanilla syrup and pink lemonade. The arrival in the mouth was textural and zingy. Notes of fruity pink peppercorn, almond milk, cider apple, gooseberry tart, cut grass, lime zest, citrus pith and orange travel sweets. After dilution we found malted milk biscuits, soda bread, ovaltine, baking soda, scone mix with sultanas, lemon jelly, pineapple sweeties and green strawberriesread more

53.425 – Illeach Ceviche

60.8% ~ Refill Bourbon Hogshead ~ 10yo ~ Islay ~ £66.30

Another typically excellent example of this great distillery. We found immediate notes of applewood smoke, charred pears, ginger wine and first aid kit ointment. With time it evolved some beautifully pure notes of seawater, pink grapefruit and Germoline. Reduction brought out smoke-infused hessian, Poire Williams, smoked rapeseed oil and rollmop herring in vinegar with a few drops of iodine. With water we got a more delicate profile with pink sea salt, gorse bush, tarred beach wood and salty ceviche with lime juiceread more

73.147 – Patisserie Au Jardin

57.1% ~ 1st Fill Ex-Bourbon Barrel ~ 10yo ~ Islay ~ £61.20

The nose took us to a kitchen on baking day – freshly baked fruit tarts, iced cakes and ginger biscuits – with black coffee and dried flowers in hessian strips. On the palate, this feast continued with brown sugar cinnamon toast, shortbread, pain au raisin and vanilla custard pies (the pastry now slightly burnt); the finish combined chilli chocolate and zingy lemon. With water, the nose seemed fresher – lemon meringue pie, laundry flapping in a rose garden and “eating doughnuts on a links golf course”. The palate now served us ice cream cones, lemon sorbet and cupcakes in the gardenread more

94.27 – Leave The Bottle…

54.4% ~ 2nd Fill Ex-Bourbon Barrel ~ 13yo ~ Highland ~ £72.60

The neat nose suggested varnished sandalwood, bitter citrus piths, hessian, cooling oils and pineapple jelly. We also got freshly made tablet, honeycomb and crushed macadamia nuts. With reduction it displayed more mineral oils, shoe polish, malt syrup and barley sugars, plus some American cream soda and golden syrup. The palate opened with a lovely oily and waxy texture. Flavours of sweetened breakfast cereals, fruit salad juices, white fruit teas and then camphory and citric notes. With water we found lemon cough drops, candied hazelnuts, pink wafer biscuits and yellow fruit jamsread more

112.80 – Park Bench Reverie

59.8% ~ 2nd Fill Ex-Bourbon Barrel ~ 10yo ~ Highland ~ £51.00

The nose suggested Hawaiian grass skirts and floral garlands, butterscotch, lemon puffs, mashed banana and honey on porridge. The initial palate was ultra-sweet (toffee, treacle tart, clover honey, jam sponge), but we also got buttered toast, Demerara espresso dregs, wood chips and herbal intimations of rosemary and Chartreuse. The reduced nose was like having ice-cream with raspberry sauce and lemon meringue pie on a sunny park bench. The palate still delighted us with café noir biscuits, corn candies and maple syrup, while in the finish now we discovered drying, lip-tingling hints of liquorice, sour cherry, dark chocolate and sweet gingerread more

128.23 – Fruit Hat

61.1% ~ 1st Fill Ex-Bourbon Barrel ~ 8yo ~ Wales ~ £76.00

On nosing this one neat, some of us, more advanced in years, remembered Carmen Miranda, the Portuguese-born Brazilian samba singer who popularised the festive and colourful fruit hat. The taste was as outrageous, almost indescribable, immensely tropical, truly a fruit overdose and felt like it should count for your full quota of 5-a-day! Water, if anything, extrapolated the fruity characters with aromas of fruit flavoured, soft taffy candy, peach schnapps, mango ice cream, almond extract and frangipaneread more

140.15 – Walk-In Cigar Humidor

55.5% ~ Refill Ex-French Oak Barrique ~ 4yo ~ Texas ~ £86.70

We imagined walking through a banana plantation where individual bunches of bananas are encased in blue plastic bag to protect them from insects. On the palate neat, black cherry dark balsamic vinegar and a distinct peppery note. Following dilution we entered a walk-in cigar humidor, while the taste was now a lot sweeter with molasses cookies and buttered popcorn and the spiciness gentler with roasted cinnamon and nutmeg almonds. 144.3 – They Sailed Out To Sea…

62.84% ~ 1st Fill Ex-Bourbon Barrel ~ 8yo ~ Sweden ~ £88.70

A superbly aromatic and highly marine nose. Wonderfully detailed and intricate with green coastal herbs, seaweed, sea air, chalky beach pebbles, driftwood and sand. A distant trail of bonfire smoke and wet canvas. Water brought out carbolic wash acidity, citrus juices, dried kelp, boiled shellfish and kippers drizzled with lemon juice. The palate when neat was superbly sooty with anthracite embers, sheep wool oils, malt vinegar and a wonderfully thick quilting of peat smoke.
