42.79 – Riding The Turf
58% ~ Re-Fill Ex-Bourbon Hogshead ~ 14yo ~ Highland ~ £66.30
Initially aromas of green malt piled in an old barn joined the spicy fruit of scotch bonnet chillies and the oily sweetness of marzipan. However, the palate launched a peat bomb that morphed through medicinal camphor and aniseed flavours and towards cedar wood and green leaf tannins with hints of clean earth. A few drops of water beckoned the waves to crash over rock pools and freshly prepared seafood with sliced lemon, before extinguishing bonfires and only stopping when the surf butted against mountains of fresh turfs of peat. Herbal notes now embraced rosemary and marjoram with salted caramel, lemon posset and salt and pepper squid to finish... read more
28.76 – Fresh And Nourishing
61.2% ~ 2nd Ex-Bourbon Barrel ~ 9yo ~ Highland ~ £52.00
A very fresh aroma to begin, impressions of freshly folded woolen blankets, mountain air, rainy woodland, wet ferns and then freshly baked breads and pastries. Some herby scone mix, sandalwood, pebbles and chalk. A lovely balance of freshness and texture. With water we got bergamot, orange zest in black tea, aromatic green herbs, white stone fruits and toasted fennel seed. A nourishing note of crushed Brazil nut and lime curd too. The palate was savoury to begin, with white miso, brown bread and tobacco leaf. Then wood spices, vanilla cream. eucalyptus and lemon infused olive oil. Water brought more medical notes like cough drops, along with malt syrup and lemon barley water. A sense of old school shilling ales and sweet stout... read more
9.242 – A Pleasant, Sunny Disposition
56.7% ~ 1st Fill Ex-Bourbon Barrel ~ 18yo ~ Speyside ~ £100.80
The nose displayed a pleasant, sunny disposition, with flower meadows, grass, hay, blooms and blossoms, grape and bramble jelly, popcorn, paint and crème brulée – genteel and delightful. The palate was juicy and fruity – tinned mandarins in syrup, apricot Danish, fruit yoghurt, with sweet notes of candy canes, chocolate biscuits and caramelised parsnips; a warm finish of cinnamon and other mild spices. The reduced nose found additional aromas of homemade granola on a baking tray, Crunchie bars and sunshine on oranges in an oiled wooden bowl. The palate gave us blackcurrant, kumquat, pears, plums and lemon curd, vanilla custard and crystallised ginger... read more
28.77 – Trio Of Ice Creams
59.7% ~ 2nd Fill Ex-Bourbon Barrel ~ 9yo ~ Highland ~ £57.00
Aromas of aniseed liqueur, peppermint chews and fisherman’s friends were joined by cranberry walnut bagels with hazelnut cream cheese and a Virgin Mary mocktail. On the palate neat, a gazpacho with sweet yellow onion, cucumber, red bell pepper, fresh basil, garlic and Sherry vinegar with honey and salt coated peanuts. Following a drop of water, we baked a lemon olive oil cake incorporating lemon in four ways – lemon zest, juice, extract and Limoncello. To taste refreshing and sweet like three scoops of ice cream one being pistachio, another stracciatella and in the finish, salted caramel... read more
135.48 – Cool Concoction
61.5% ~ 1st Fill Ex-Bourbon Barrel ~ 9yo ~ Highland ~ £53.10
We imagined putting together a flower arrangement, a classical bouquet – white avalanche roses complimented by seasonal green foliage to be delivered with a box of rum and raisin fudge. A sweet start on the palate with Turkish delight, baklava and lychee Phirni, but almost out of nowhere, a spiciness came to the fore, building up and up like in an Indian fruit chaat. Water added popping candy, lemon sherbet and plenty of pear drops alongside a variety of cocktail concoctions. On the nose a caipirinha, while we sipped a ‘rum sunset’ using orange juice, Jamaican spiced rum, lime and grenadine... read more
72.111 – Balance And Harmony
61.9% ~ 2nd Fill Ex-Bourbon Barrel ~ 15yo ~ Speyside ~ £75.60
We all associated the aroma somewhat with the colour green, kumquat (cultivar ‘Centennial Variegated), lime, honeydew melon, kiwi and pistachio ice cream. This theme carried on as we chewed on a green twig before we had a refreshing mint tea followed by a Berliner Weisse beer flavoured with sweet woodruff syrup giving it a vivid lime-cordial hue. Diluted the scent was that of strawberry tarts, flapjacks, butter icing and a new woolly jumper (of course green!), while to taste, lime cream mousse with cape gooseberries and the mint tea had now the addition of some lemon verbena. After all this green we were feeling rather balanced and in total harmony... read more
