56% ~ Re-Fill Ex-Guyanese Rum Barrel ~ 17yo ~ Islay

A deafening waft of rum greeted us from the top of the nosing glass! Pickled exotic fruits wrapped in seawater-soaked bandages and Elastoplast. Sardines bobbing in antiseptic, olive bine, anchovy butter and tarry beach wood. A bonkers nose we all agreed. With water, we noted smoked green tea, myrtle, wintergreen….read more

SMWS 76.148

76.148 – Grilled Lemon-Garlic Elk Steak

51.6% ~ 1st Fill Ex-Oloroso Sherry Hogshead ~ 32yo ~ Speyside

A subtle, sweet perfumed aroma with soft nutty sherry notes and a moist, rum-soaked Caribbean black cake made this a wonderful nosing dram when neat. On the palate deep, dark and spicy with flavours of chestnuts roasted on an open fire, burnt oranges with charred, sugary rosemary and green figs in armagnac syrup. With a tiny drop of water, we seared an elk steak in a cast iron skillet…read more

SMWS 39.222

39.222 – Delicate Latticework

60.9% ~ 1st Fill Ex-Bourbon Barrel ~ 11yo ~ Speyside

We noted a mellow floral aroma of cherry blossom and magnolia before fruits like peaches, mangoes and lychees appeared. A lovely neat fresh taste; a lemon bee pollen sorbet, with honeycomb meringue mango, papaya and Chantilly cream followed by a hint of rose petals and in the long finish candied ginger and Turkish delight. Following a drop of water, a fruity, floral and delicate perfumed scent…read more

61.1% ~ 1st Fill Ex-Bourbon Barrel ~ 7yo ~ Highland

Delightful, perfumed sweetness pervaded the nose – Turkish Delight, sherbet straws, orange blossom, lemon curd, marshmallows and nougat; we also found balsa matchboxes and sandalwood and patchouli incense. The initial palate was juicy, tart and spritzy – pomegranate seeds, green melon, peaches and feta; eventually discovering nutshells, spiced cakes and licking the porridge spurtle….read more

SMWS 93.168

93.168 – Defies Belief!

57.4% ~ Re-Fill Ex-Bourbon Hogshead ~ 18yo ~ Campbeltown

A surprising amber colour from a refill hogshead was followed by an equally surprising set of aromas. We imagined being in a traditional blackhouse and throwing onto the glowing peat slabs white paraffin fire starters as we crushed raspberries under muddy wellies. On the palate again very surprising as we described the taste like a lamb surf and turf with prawns and asparagus in a mushroom and red wine sauce….read more

SMWS 3.332

3.332 – Best Barbeque Dram Ever

56.9% ~ 1st Fill Toasted and Re-Charred Barrique ~ 17yo ~ Islay

Fourteen years in ex-bourbon wood was the pre-amble to further enhancement in a first-fill re-char barrique. The nose was a seaside barbeque – seared scallops and bacon, toasted buns, treacle, tar, tobacco and peat embers. The delights of the neat palate seemed never ending – blood orange, cognac, golden syrup, pork crackling, burnt heather and wood smoke….read more

SMWS 41.142

41.142 – Jam-Packed With Dark Fruits

57.5% ~ 1st Fill Spanish Oak Ex-Pedro Ximenes Butt ~ 13yo ~ Speyside

We were cooking sherry-braised pork cheeks, from black Iberian pigs known as Cerdo Ibérico, with roasted garlic mashed potatoes. Rich, nutty and intense on the palate – like venison steak in a full-bodied red wine and bitter chocolate sauce and for good measure, a few Reese’s Pieces peanut butter candy in a crunchy shell. Water added mince pies and brandy butter….read more

SMWS 112.92

112.92 – Sunshine And Shadow

58.0% ~ 1st Fill Ex-Bourbon Barrel ~ 19yo ~ Highland

The nose has teasing suggestions of pebble beach bonfire ash and sun-cream, definite sweetness (barley sugars, Turkish delight, Victoria sponge, walnut fudge) and then cigar box and spiced apple introduce themselves at the last minute. The palate offers rum and raisin chocolate, peanut brittle, nougatine and honey, while the finish produces ginger, mace….read more

SMWS 10.228

10.228 – “Do Try This AT Home”

60.2% ~ 2nd Fill Ex-Oloroso Sherry Hogshead ~ 7yo ~ Islay

The sky was on fire as we barbequed marshmallows and kippers on the beach over smouldering peat slabs. We then added some petrol to the barbeque (“don’t try this at home”) and one of the marshmallows fell into the ashes so we picked it up, cleaned it and ate it – definitely, different and unique! We used salt water to douse the barbeque but before it finally burnt out….read more

SMWS 36.183

36.183 – A Melange Of Flavours

56.7% ~ 1st Fill Ex-PX American Oak Hogshead~ 11yo ~ Speyside

The impressive colour was followed by an intriguing set of aromas, blackcurrant jam, candied fennel seeds, honeyed cashew nuts, black pepper, hints of leather and prune infused shisha tobacco. We made caramelised fried apples and served them on top of buttermilk biscuits topped with vanilla ice cream, whipped cream and lightly salted caramel sauce. SMWS 63.77

63.77 – Echoes

52.0% ~ 1st Fill Ex-Bourbon Barrel ~ 18yo ~ Speyside

A wonderful aroma that brought to mind longer aged, older style Speysiders with aromatic notes of undergrowth and hedgerows. Also soft, supple waxy tones, apple rings, muesli, dried apricot and honeysuckle. Touches of camphor and spearmint were also noted. Reduction brought out more honeyed qualities, also medical aspects like wintergreen and orange cough sweets….read more

SMWS 1.247

1.247 – Enigmatic And Disputatious

64.3% ~ 2nd Fill Ex-Bourbon Barrel ~ 8yo ~ Speyside

The palate was an enigmatic mix of biscuit wafers, pear belle Helene and a cream soda float, with marshmallows toasted on green sticks, burnt paper and tobacco – a 1950’s cafe perhaps. The palate delivered chocolate fondants, toffee, burnt caramel and blackcurrant jam on toast, then surprising wasabi heat and a lick of peat smoke, aniseed and charred wood; a disputatious dram….read more

GN5.4 – Flower Philosophy

A rather robust aroma of tiger balm and water chestnut at first. Then eucalyptus, lemon and grapefruit peels, pollens and wee hints of star anise and heather flowers. The juniper is quite tame at first. 4.284 – Orcadian Nights

55.2% ~ Re-Fill Ex-Bourbon Hogshead ~ 20yo ~ Highland

We found this one simple, direct, pure and totally beautiful. A vividly expressive example of this great Orcadian distillate. Full of crisp sea air, crushed chalk, brittle minerals, herbal peat smoke, heather ales, white pepper, beach pebbles, waxed jackets and dried wildflowers. With water we got shy notes of sandalwood emerging, then lightly smoked herbs, old oily rags, seaweed flakes in ramen broth….read more

SMWS 42.69

42.69 – Pub Grub

57.5% ~ Re-Fill Ex-Bourbon Hogshead ~ 14yo ~ Highland

A richly peaty nose tinged with fermentary aspects. We found initial notes of cider apples, bonfire smoke, natural tar, hospital corridors, mussels pickled in brine and fish sauce. Water brought sharp green acidity, nettles, charred beach wood, seashells, grilled langoustine and bandages soaked in mercurochrome. The neat palate was deeply sooty and fat with bacon lardons….read more

SMWS G15.11

G15.11 – Worlds Collide

58.1% ~ Re-Fill Ex-Trinidad Rum Barrel ~ 13yo ~ Highland

Some distinctly kitcheny aromas were recorded initially by the panel. Including floor cleaner, bakelite, fresh jay cloths and lime air freshener. A fun and unusual profile that evolved to include jasmine flower, break fluid and citrus juices. Reduction brought out the rum influence more clearly with sappy pine needles, eucalyptus resins, ginger in syrup and pear cordial….read more
