A deafening waft of rum greeted us from the top of the nosing glass! Pickled exotic fruits wrapped in seawater-soaked bandages and Elastoplast. A subtle, sweet perfumed aroma with soft nutty sherry notes and a moist, rum-soaked Caribbean black cake made this a wonderful nosing dram when neat. On the palate deep, dark and spicy with flavours of chestnuts roasted on an open fire, burnt oranges with charred, sugary rosemary and green figs in armagnac syrup. We noted a mellow floral aroma of cherry blossom and magnolia before fruits like peaches, mangoes and lychees appeared. Delightful, perfumed sweetness pervaded the nose – Turkish Delight, sherbet straws, orange blossom, lemon curd, marshmallows and nougat; we also found balsa matchboxes and sandalwood and patchouli incense. A surprising amber colour from a refill hogshead was followed by an equally surprising set of aromas. We imagined being in a traditional blackhouse and throwing onto the glowing peat slabs white paraffin fire starters as we crushed raspberries under muddy wellies. Fourteen years in ex-bourbon wood was the pre-amble to further enhancement in a first-fill re-char barrique. The nose was a seaside barbeque – seared scallops and bacon, toasted buns, treacle, tar, tobacco and peat embers. We were cooking sherry-braised pork cheeks, from black Iberian pigs known as Cerdo Ibérico, with roasted garlic mashed potatoes. The sky was on fire as we barbequed marshmallows and kippers on the beach over smouldering peat slabs. We then added some petrol to the barbeque (“don’t try this at home”) and one of the marshmallows fell into the ashes so we picked it up, cleaned it and ate it – definitely, different and unique! We found this one simple, direct, pure and totally beautiful. A vividly expressive example of this great Orcadian distillate. Full of crisp sea air, crushed chalk, brittle minerals, herbal peat smoke, heather ales, white pepper, beach pebbles, waxed jackets and dried wildflowers. A richly peaty nose tinged with fermentary aspects. We found initial notes of cider apples, bonfire smoke, natural tar, hospital corridors, mussels pickled in brine and fish sauce. Water brought sharp green acidity, nettles, charred beach wood, seashells, grilled langoustine and bandages soaked in mercurochrome. Some distinctly kitcheny aromas were recorded initially by the panel. Including floor cleaner, bakelite, fresh jay cloths and lime air freshener.
