Flavour In Bloom – The Scotch Malt Whisky Society release (outturn) several single cask bottlings of Scotch, Whisk(e)y, Rum and Gin, to name a few, usually on the first Friday of every month. 58.5% ~ 1st Fill Ex-Bourbon Barrel ~ 9yo ~ Speyside

In our mind’s eyes we saw lemon sorbet, shortbread, pineapple tarts, custard cream but the descriptor from one panellist, which certainly topped the bill for being the most imaginative, was “whipped egg whites and sugar known as ‘stiff peaks’, like the top of the newly built hotel in the St James’s centre in Edinburgh”….read more


3.328 – Wish You Were There?

58.1% ~ 2nd Fill Ex-Bourbon Barrel ~ 17yo ~ Islay

Imagine roasting butterfly Tiger prawns in a garlic ginger soy sauce on the beach enjoying the mirror like reflections of white fluffy clouds in the blue sky on Lochindaal. 60.2% ~ 1st Fill Ex-Bourbon Barrel ~ 13yo ~ Highland

Alluring aromas combined the light salt of sea air with the delicate floral notes of heather and jasmine tea. A subtle medicinal character stood aside while dried seaweed and pink pickled ginger complimented smoked oysters, fresh seafood and tangy sea buckthorn. 7.275 – Allspice Sponge Cake

56.0% ~ 1st Fill Ex-Bourbon Barrel ~ 12yo ~ Speyside

Thick buttery notes and sweet icing coated roasted chestnuts and sponge cake with a layer of apricot jam, while cinnamon, liquorice and sultanas suggested dark rum. Flavours were a sticky combination of cloves, nutmeg and star anise blended into honey syrup with dark chocolate, coffee liqueur and leather. 16.63 – Smoking Cigars with Sumatra Wrappers

64.3% ~ 2nd Fill Ex-Bourbon Barrel ~ 8yo ~ Highland

One of the panellists, not that he was that old, was reminded of Victorian cough mixture while others described the aroma as charred ginger, liquorice, cigar ash, and a smoky PX vibe. On the palate neat, we found sweet smoky prune juice with a spicy kick in the finish alongside singed rosemary, roasted red peppers, and treacle toffee….read more


39.240 – Summer In A Glass

60.2% ~ 2nd Fill Ex-Bourbon Barrel ~ 10yo ~ Speyside

The nose was summer in a glass – orchards and flower meadows, vanilla slice, brown sugar on mashed bananas, rhubarb rock, strawberry laces and summer creams. The palate was completely different – we encountered pencil shavings, green apple peelings and jalapenos, lemon tart, liquorice, leather and stewed pears with cloves….read more

56.4% ~ 2nd Fill Ex-Bourbon Barrel ~ 12yo ~ Speyside

Aromas characterised by ‘red’ suggested strawberry sweets, red roses, red apples and tomato plants against a backdrop of Turkish delight, fruity trifle and coconut cream. The palate introduced the spiciness of ginger, cinnamon and turmeric paste with hints of charred cask and burnt toast with strawberry jam….read more


48.142 – Hipflasks Not Hipsters!

58.2% ~ 1st Fill Ex-Bourbon Barrel ~ 8yo ~ Speyside

The nose offered us a clear window onto this classic full bodied distillate with big notes of fatty waxes, cooking oils, herbal ointments and nettle tea with a spoonful of cough syrup. 53.397 – A Splash of Ash

59.0% ~ Re-Fill Ex-Bourbon Hogshead ~ 10yo ~ Islay

Lobster sizzled on a grill as sea-spray splashed onto kelp and dusty ash from a beach campfire. Among the ash and singed sticks we found toasted pineapples and peaches with notes of liquorice, seaweed and scotch broth. 53.5% ~ 2nd Fill Ex-Bourbon Barrel ~ 19yo ~ Speyside

Zesty apple skins and gooseberries combined with green leaves, marjoram and oregano while wisps of fragrant incense smoke and smouldering heather washed over pot pouri. Fruit-driven flavours exploded on the tongue before liquorice and dandelion & burdock introduced more earthy notes of sautéed chanterelle mushrooms and old dunnage warehouse floors…read more


66.215 – Balsamic Minotaur

59.6% ~ 2nd Fill Ex-Bourbon Barrel ~ 14yo ~ Highland

A wonderfully dense and thick nose, typical of this notoriously ‘farmyard’ distillery. Immediate notes of caramel sauce, chewing and pipe tobaccos, plum wine, five spice and strong black tea. 57.4% ~ Re-Fill Re-Charred Hogshead ~ 11yo ~ Highland

The nose was big, bold and frankly offbeat – peanut brittle, gingerbread and Portuguese custard tarts, orange liqueur and preserved lemons, seaweed, sloes and charred oak staves. An unusually robust nose greeted the panel. Lots of hot toast, wood embers, fabrics, boiled lime sweets and putty. More lively that we are used to from this normally conformist distillery. A firm and fulsome aroma to begin, with waxes, eucalyptus balms, elderberries and then subtle notes of sandalwood, lemon barley water and new leather shoes. Easy going and highly pleasurable. 122.48 – Shamanic, Apothecary, Witchcraft Smoke

61.8% ~ 2nd Fill Ex-Bourbon Barrel ~ 8yo ~ Highland

The nose wafts perfumed, shamanic, apothecary, witchcraft smoke; burnt twigs, singed lemon and grilled fish skin; cinnamon sticks in honey, smoked trout paté and Frito pie. The palate delivers a big smoky tasty beast – hickory-smoked hotdogs, over-toasted marshmallows and rosemary and fennel on barbecued fish – then a finish of liquorice, cinders and fire breather’s throat…read more

We mixed a cocktail called ‘Smoked Cinnamon’- a concoction of cinnamon syrup, apple juice and grain whisky served in an old-fashioned glass and garnished with a smouldering stick of cinnamon.
