52.6% ~ 1st Fill Ex-Bourbon Hogshead ~ 32yo ~ Highland
The nose evokes a mansion house – sitting in a leather wingback armchair with Turkish delight and chocolate toffees on a mahogany table with flower meadows beyond the open window. The delicate palate conveys summer blossoms and an abundance of summer fruits (strawberries, blueberries, raspberries), developing into spiced fruit cake and tobacco with a tickling finish of sloes and oak…read more
50.0% ~ 1st Fill Ex-Port Pipes and 2nd Fill Ex-Bourbon Barrels ~ 10yo ~ Single Malt
This wonderfully ruby red small batch is a celebration of sweet complexity. We’ve drawn together selected casks of Speyside single malt, some matured full term in bourbon barrels and some additionally matured in ex-Ruby Port pipes for no less than two years. The result is rich, fruity and evocative of trips to sunnier climes. We imagined walking through a wine cellar of one of the lodges in Vila Nova de Gaia located close to the Douro river….read more
65.6% ~ 1st Fill Ex-Bourbon Barrel ~ 9yo ~ Highland
We made Belgian waffles with melted white chocolate, vanilla ice cream and coconut flakes as well as almond tartlets with a plum cream and pineapple cubes. A robust taste neat of wood, leather and tobacco was complimented by a sweet and spicy orange liqueur, finishing with dark cherries soaked in brandy, muscovado sugar and tarragon to which we added a pinch of pink peppercorns….read more
55.8% ~ 1st Fill Ex-Bourbon Barrel ~ 18yo ~ Lowland
From Euan, our spirits manager: This has everything you would expect of an elegant, older Lowland whisky – in this case it’s triple distilled, with narrow cut points and matured in active bourbon wood to bring a classic and delicious Sweet, Fruity & Mellow flavour profile…..read more
57.6% ~ 1st Fill Oloroso & Bourbon Quarter Cask ~ 10yo ~ Speyside
From Euan, our spirits manager: There’s a beautiful balance to this, which was first matured in bourbon hogsheads before we transferred it to 125-litre oloroso quarter casks that were supplied to us by our partners in Jerez, José y Miguel Martin. After that, we put it back into second fill bourbon barrels that we’d recently emptied, giving it time to relax and marry before bottling. The result is a superb dram with the big, dark and intense flavours you would associate with oloroso sherry maturation, but with the lush tropical notes from the bourbon casks as well……read more
59.7% ~ 1st Fill Ex-Bourbon Barrel ~ 8yo ~ Campbeltown
From Euan, our spirits manager: Campbeltown currently feels like a region in the renaissance, with news of new distilleries being planned, and we wanted to explore the town’s historic reputation for rich, characterful spirit. This is firmly in our Oily & Coastal flavour profile that is often associated with Campbeltown. There is no peat influence but still a coastal salinity, while the first fill bourbon barrels bring a lovely woody influence with vanilla and spice to balance everything beautifully…….read more
57.0% ~ 2nd Fill Ex-Bourbon Hogshead ~ 17yo ~ Islay
From Euan, our spirits manager: This is such an elegant take on a peated Islay whisky, left to mature over the course of 17 years in less active hogsheads that have brought a beautiful herbal peat smoke along with exotic fruits. Gorgeous!
A typically exquisite nose that screams ‘this’ distillery. Abundant soft, almost overripe, exotic fruits. Wispy peat smoke, bonfire embers, bonjella mouth gel, seawater, pink grapefruit and light antiseptic notes. Just exquisite! With water we found it became more mineral, with dried mango and guava, threads of peat smoke, ointments, dried herbs and a lovely umami richness…….read more
58.4% ~ 1st Fill Ex-Oloroso Hogshead ~ 8yo ~ Islay
From Euan, our spirits manager: Islay is the only region where we’ve bottled two festival whiskies this year, and although they’re both in our Peated flavour profile, this one shows just how different these island drams can be – even from the same region and from the same flavour profile. In this case, the spirit spent time in bourbon hogsheads before we transferred it for more than two years to first fill American oak oloroso hogsheads from our partners at Tevasa cooperage in Jerez. That’s given the whisky a great mix of a more full-on Islay peaty character with dark, nutty and sweet oloroso sherry……..read more
55.6% ~ 1st Fill Ex-Bourbon Barrel ~ 18yo ~ Highland
From Euan, our spirits manager: The whole notion of whisky regions is open to interpretation, but if you were to imagine a classic unpeated Highland style, then this is it – it’s in our Spicy & Dry flavour profile, with a rich mouthfeel and full of wonderful fruity esters.
The complex nose immediately evoked a generous helping of hazelnut spread. There were bars of nougat, flaked almonds, and sweet peanuts. “This is nuts!”, exclaimed one humorous panellist. In time, it became more oily, chamois leather, over-ripe peaches, and nectarines as well as a leafy note, with eucalyptus and tea tree oil…….read more
63.1% ~ 2nd Fill Ex-Bourbon Barrel ~ 20yo ~ Highland
The pleasantly fresh nose has vanilla pods, toasted coconut and pine forests, with subtle hints of nutmeg, cinnamon, anise and varnished oak. The juicy, mouth-watering palate tantalises with perfumed mango, peaches and pears, banana bread, coconut macaroons and icing sugar drizzled over tasty pastries. Water brings up the wood on the nose – resinous pine sap, varnished boats and fresh oak……read more
62.6% ~ 2nd Fill Ex-Bourbon Barrel ~ 8yo ~ Highland
What is this? Window cleaner with dried sage, bubblegum, antiseptic and TCP-soaked bandages? It can only be the produce of the world’s most convoluted and bonkers still room. Reduction brought out engine oil, smoked fennel, malt vinegar crisps and fresh citrus fruits charred with a blowtorch. Bonkers but hugely entertaining…….read more
60.8% ~ 1st Fill Ex-Oloroso Spanish Oak Hogshead ~ 7yo ~ Speyside
We imagined getting our brand-new leather walking boots out of the box with the plan to break them in that afternoon walking through a pine forest. It was a warm day as we made a stop at a clearing where we enjoyed blackcurrant cordial as well as sticky and sweet toffee cupcakes with freshly picked blackberries. After a drop of water, a bag of mixed nuts, slices of orange and clementine made the rounds and we completely forgot our initial aim…….read more
