63.3% ~ 2nd Fill Ex-Bourbon Barrel ~ 8yo ~ Speyside
The nose – mm – sharp, fresh, vibrant and head-clearing – candied lemon, damson liqueur, cassia bark and charred oak. The palate is fruity, herbal and interesting – loadsa lemon (lemonade, lemon curd, verbena) and honey; then burnt twigs and star anise to finish. Delicate, floral and easy-going, the nose whispered rumours of pecan pie, pears Belle Helene, crystallised orange, sugared almonds, honey and butterscotch – maybe hints of pipe tobacco in a laundry. We made Belgian waffles with melted white chocolate, vanilla ice cream and coconut flakes as well as almond tartlets with a plum cream and pineapple cubes. A robust taste neat of wood, leather and tobacco was complimented by a sweet and spicy orange liqueur, finishing with dark cherries soaked in brandy, muscovado sugar and tarragon to which we added a pinch of pink peppercorns….read more

This one was virtually clambering out of the glass! Immediate and massive notes of salty pasta water, industrial antiseptics, floor cleaner, germoline, herbal mouthwash and salt-baked white fish. The neat aroma suggested pear tarts, muddled green herbs, underripe cooking apples, foaming stout and fizzy lemon sherbet. A charismatic and playful young highlander. With water it got spicier and showed notes of putty, sunflower oil, bakelite, cinder toffee and bakewell tart. We remarked on the shiny auburn colour as one panellist dreamed of driving an original Porsche 911, complete with leather upholstery, wooden dashboard and steering wheel with aluminium poles. The taste came as a slight surprise, dark – but not pitch black – like Pontefract cake with hints of tar and ash. We felt even more startled after the addition of water….read more

The nose led to a garden – sunshine, cut grass, a fruit bowl (with nectarines, tangerines and bananas) and tea served with honey on digestives and granny’s home-made tablet. On the palate, the tea was joined by Turkish coffee and we got burnt caramel, ginger snaps and chewing a twig. The reduced nose made us think of buttered crumpets, Black Forest gateau….read more

The aroma neat reminded us of banana loaf, sticky toffee pudding, rhubarb crumble and peach cobbler while on the palate, a big sweet oaky hit at first followed by a rye-type spiciness as well as a nutty oiliness. The finish was something else, panna cotta tarts with lingonberries and chocolate.
