GN6.4 – Something for Everyone

49.4% ~ 1st Fill Ex-Bourbon Barrel ~ 1yo ~ Edinburgh ~ £45.80

At first nosing we found it to be on the sweeter side with fruit pastilles and pink marshmallow. However, the spices came through in time with caraway, coriander, and white pepper. Some water brought out peppermint, limoncello and geraniums. We also got fruity soaps, herbal wines, and posh marmalade. The palate was rather floral with Turkish delight at first, then sandalwood, coriander leaf, citrus marmalades, bitter lemon and things like crushed nettles and flowery bath salts… read more

4.345 – Beach Bonfire at Sundown

62.9% ~ 1st Fill Ex-Bourbon Barrel ~ 11yo ~ Highland ~ £67.80

At six years of age, we combined selected casks from this distillery and then returned the single malt into a variety of casks to develop. This is one of those casks. The nose evoked bloody marys at sundown, and foil-wrapped potatoes and chicken wings cooking on the bonfire, followed by custard tarts and cigars. To taste, the smoke was evident but urbane – burnt heather stems and candyfloss sticks, tar, toffee and tobacco…. read more

9.222 – Dram O’Clock

62.9% ~ 1st Fill Ex-Bourbon Barrel ~ 13yo ~ Speyside ~ £62.00

A beautiful and richly satisfying nose we thought. Immediate and assertive aromas of yellow fruits, meadow flowers, vanilla ice cream and baled hay. Then some touches of condensed milk and fresh parsley came to the fore. With reduction we found lighter and drier notes of fabric, linseed oil, cut green apples, saffron and nettles. The mouth opened with a beautiful, natural sweetness which encapsulated forest fruits, bubble-gum, citrus curds, pineapple jelly and rhubarb and custard sweets. Water gave use lemon barley water, plum wine, sweetened olive oil, butter pastry and slightly spicier notes of cloves and cinnamonread more

9.246 – Sweet Dreams (Are Made of This)

54.6% ~ 1st Fill Ex-Bourbon Barrel ~ 18yo ~ Speyside ~ £115.00

Mellow fruits flood the nose with interest and enchantment – pears, plums, peaches, banana liqueur and sherbet lemons; then evasive hints of hazelnuts and sesame seeds slip in silently from the side. The palate combines dreamy crème anglaise and comforting apple pie with relaxing camomile, before the forbidden pleasures of chocolate and tobacco seduce the finish… read more

12.70 – Eerie On The Edge of Your Seat Stuff

57.8% ~ 2nd Fill Charred Red Wine Barrique ~ 12yo ~ Speyside ~ £71.00

This felt immediately ‘on the edge of your seat stuff’ – like a pulse-pounding thriller, think of Hitchcock (Vertigo, Psycho or Rear Window) or the short stories of Edgar Alan Poe (The cask of Amontillado or Hop-Frog). We drank it and it made our blood run cold like watching a film noir eating creamy dark chocolate mousse with Sichuan peppercorns…. read more

19.76 – A Utopia of Bananas and Muffins

52.3% ~ 1st Fill Ex-Bourbon Barrel ~ 19yo ~ Highland ~ £125.00

Sweet aromas of mango, coconut and milk chocolate brought a tropical smile as we discovered peach yoghurt and brandy snaps. Flavours were equally pleasing with coconut milk and syrup over satsumas, papaya and passionfruit with a little ground ginger and cinnamon. A dash of pure water from an idyllic waterfall elevated floral aromas of potpourri and elderflower cordial while banana fudge, dried blackcurrants and toffee sweets … read more

28.89 – Smacks of Citrus

59.6% ~ 1st Fill Ex-Bourbon Barrel ~ 10yo ~ Highland ~ £60.00

The nose combined sweet fruitiness (tinned fruit salad, Black Forest gateau, stewed plums in custard) with nutty, woody aromas (peanut shells, nougat, coconut snowball, walnut whip, pencil box). The palate suggested flambéed nuts and raisins, toasted cashews and chocolate-coated hazelnut bars, cherries, orange and blackcurrant, before finishing with cinnamon, dark chocolate and liquorice. On the reduced nose, we imagined fresh laundry flapping in a sunlit lemon grove, pineapple cake… read more

35.316 – Fine Floral Fruity Fragrances

59.6% ~ 1st Fill Ex-Bourbon Barrel ~ 9yo ~ Speyside ~ £60.00

We all enjoyed this gentle nose, which ranged from carnations and cherry blossom fragrance to fruit salad chews, melon, green grapes and candied plums, with pale hints of cotton and blackboard chalk. Fruit dominated the palate – Juicy Fruit gum, apple peelings, orange zest, brambles and strawberry jam; then blue lady tea (with flower petals), sherbet and mild spice to finish… read more

36.200 – Kissing a Cricket Ball (for luck)

58.1% ~ 1st Fill PX American Oak Hogshead ~ 15yo ~ Speyside ~ £88.90

Thirteen years in ex-bourbon wood preceded final maturation in a first fill American oak PX hogshead. On the nose we got prunes, figs and raisins (Eccles cakes), toffee apples, jammy dodgers and cherry clafoutis – then faint inklings of soft leather handbags and pipe tobacco. The neat palate was smooth and deeply satisfying, with sherry trifle, brown sugar, plum jam and gentle spices…. read more

38.38 – Chestnut Forest Confections

51.6% ~ 2nd Fill Ex-Bourbon Barrel ~ 25yo ~ Speyside ~ £345.00

The nose, elusive at first, took us through a chestnut wood to a confectioner, where we saw marzipan petits fours, jammy dodgers and chocolate honeycomb bars displayed on wooden shelves. The palate (beautifully matured) offered juicy kiwi and lemon, vanilla ice cream, and raspberry, coconut and dark chocolate bars, plus lingering tingles of ginger and nutmeg. With water (careful!) – lemon tart, butterscotch, popcorn, and strawberries… read more

39.254 – Minty, Creamy and Green

61.9% ~ 1st Fill Ex-Bourbon Barrel ~ 10yo ~ Speyside ~ £54.80

We imagined preparing a carrot, tomato and beetroot salad with a few strands of coriander and fenugreek leaves, drizzled with fresh lemon juice. On the palate neat the mixture of a sweet chilli sauce combined with lime flavoured menthol lozenges and after dinner mints, made this truly an experience. Water added a glass of fizzy apple juice, Greek natural yoghurt with honey, chopped almonds, cut grass as well as lemon butter icing and crème de menthe on the nose. To taste stewed rhubarb with lemon sherbet, zingy cooking apples and thick cut marmalade all washed down with a classic Grasshopper cocktail – minty, creamy and greenread more

46.138 – Shades of Sherry

58.1% ~ 1st Fill Olorosso Hogshead ~ 15yo ~ Speyside ~ £88.70

Some lovely, classically sherried qualities were immediately apparent upon first nosing – lots of brown bread, treacle, walnuts, damp leaf mulch and cocoa powder. We also noted fir woods, candied citrus peels and freshly ground coffee. With water we got coconut, custard slices, wormwood and lemon verbena with a tang of VORS palo cortado. The palate when neat was full of sweet notes of aged mead, mint choc chip ice cream and exotic hardwood resins, plus some old-school shilling ales and chocolate-coated brazil nuts… read more

48.148 – Peppermint Daydream

62.1% ~ 1st Fill Ex-Bourbon Barrel ~ 8yo ~ Speyside ~ £49.80

Lifted aromas of intense peppermint wafted over sweet caramel and geraniums beside the potting shed at the bottom of the garden. Ground ginger on the palate joined toasted coconut and custard cream biscuits while nut oils and wax gave a delightful mouthfeel. With water an abundance of fragrant flowers brought images of meadows with peppermint tea, limoncello and jam in a sponge cake… read more

59.6% ~ 1st Fill Ex-Bourbon Barrel ~ 20yo ~ Speyside ~ £105.00

Fragrant aromas of apple blossom, banana and heather honey combined with ripe pineapple, nougat and sweet bourbon whiskey. On the palate an explosion of fruit and honey collided peaches, pears and plums into apricots, nectarines and bananas against a backdrop of nougat and oily marzipan. With water came delicious pink wafers in vanilla ice cream, milk chocolate and blackcurrant syrup, before lime marmalade-coated star anise and chopped cherries… read more

66.217 – Cliche, But Who Cares?

53.7% ~ 1st Fill Ex-Oloroso Hogshead ~ 24yo ~ Highland ~ £179.80

Imagine warm, comfortable handknit mohair slippers, a pipe and a leather-bound book next to an open fire – a cliché you might say but if that is the case, why not write it. We then put our hands into a glass jar containing an assortment of liquorice sweets while dipping a cracker into a smoked oyster sauce garnished with chopped chives. After the addition of water, we were served a smoky aubergine dish called baba ganoush with warm flatbread for dunking and finished with smoked salted caramel and bitter chocolate macaroons… read more

68.96 – Abundantly Exuded Charm

55.6% ~ 1st Fill Ex-Oloroso Hogshead ~ 13yo ~ Highland ~ £74.70

A wonderful black walnut gloss colour greeted the Panel. On the neat nose the bouquet of aromas such as tobacco, oloroso sherry, dark cherries, chocolate and heather honey exuded charm. On the palate there was a deep, serious sherry expression, like a square of 100 per cent cocoa chocolate and tonka bean custard tarts. 63.9% ~ 1st Fill Ex-Bourbon Barrel ~ 14yo ~ Speyside ~ £78.00

Our eyes lit up as soon as we smelled the aroma of vanilla-flavoured scones with fresh strawberries and a big dollop of cream. Creamy and mouth-coating like a spoonful of tropical yoghurt parfait with layers of mango and passion fruit in plain yoghurt and topped with coconut granola. After the addition of a drop of water we enjoyed eating a croissant the French way, ripping it into small parts and then dipped into coffee – “faire trempette”, the art of dunking…. read more

80.42 – Big Fruit In A Small Cake

60.5% ~ 1st Fill Toasted Barrique ~ 11yo ~ Speyside ~ £61.70

Bold aromas of burnt caramel, red liquorice and cherry jam mixed with the more savoury elements of Mediterranean herbs, sandalwood and honey-roasted parsnips. The palate delivered a wave of spice as nutmeg and ginger combined before toasted sesame oil, brazil nuts and roasted chestnuts joined apricots, plums and figs. With water the deep fruits morphed into heavy fruitcake topped with brown sugar, while fresh coriander met fresh pine, vintage riesling and chamomile tea. Flavours had now calmed to black butter and Seville orange marmalade…. read more

91.34 – Biting On A Bung

59.0% ~ 2nd Fill Ex-Bourbon Barrel ~ 12yo ~ Speyside ~ £68.00

The dram fairy had been flitting around the room cleaning and polishing furniture – as a reward she got purple jelly beans, a sugar lump and some lemon tonic. The sweet, woody palate had lemon drizzle cake, liquorice allsorts and brown sugar; ginger, siftings of cinnamon and a shimmering shower of soft wood shavings. The reduced nose detected perfumed sun-cream on a gentle breeze, syrupy banana fritters and sugary, lemony pancakes… read more

93.189 – Reminiscing and Daydreaming

58.4% ~ 1st Fill Ex-Bourbon Barrel ~ 9yo ~ Campbeltown ~ £65.50

Evocative harbour aromas of smoked seafood platters and samphire mingling with farmyard tractors with hints of first aid kits and funky blue cheese. Flavours were to be found in the dark corner of a tar-covered boatyard, drinking root beer and espresso coffee with brown crab meat and liquorice. Adding water encouraged a reminiscent look back to whiskies of yesteryear, with muddy farmyards, heather smoke and chalk surrounding dark chocolate and barnacles on driftwood… read more

94.30 – Spices and Syrups

62.1% ~ 1st Fill #3 Char Barrel ~ 11yo ~ Highland ~ £70.40

First nosing suggested to us cola cubes, marzipan, fudge ripple ice cream, root beer syrup and aniseed. We also noted plum jam, sultanas and chamois leather. With reduction we found it became a little gentler and more aromatically intricate with pollens, orange oils, aged citrus peels and dark spiced teas. The palate was alive with simmering wood spices, orange cocktail bitters, spiced rye bread, cough drops and peppermint liqueur. Impressions of Jagerbombs and Tizer in the depths… read more
