Part of Signatory Vintage's 30th Anniversary series, this Caol Ila 35 Year Old was distilled in 1983 and matured in a single hogshead before being bottled in 2018. The nose is full of ginger, black pepper and delicate, smoky aromas that build into fresh citrus. The palate is caught between fruity and peaty notes, balancing fresh citrus against savoury peat, with black pepper, fresh ginger and delicate pear developing into a long, gentle finish.
