70cl / 60.6% / Signatory – A 2011 Caol Ila single malt, bottled exclusively for The Whisky Exchange by indie bottler Signatory Vintage in October 2022, that was finished in an ex-sherry butt and bottled at 11-years-old. The nose brings aromas of milk chocolate, beachside bonfires, vanilla, cookies, smouldering leaves, green apples and creamy cheesecake, followed on the palate by notes of burning pine needles, chocolate sauce, strawberry cheesecake, tar, charred limes, milk chocolate and smoke that linger in the finish.
