Kilchoman – Pedro Ximenez Sherry Cask Matured 2023
This latest release from Kilchoman Distillery is a full sherry maturation. Their PX sherry casks containing this fine liquid are matured for a minimum of five years. These casks were previously used by Bodega Jose y Martin in Jerez, Spain.
Kilchoman is Islay’s farm distillery. Their 100% Islay is distilled, matured and bottled at the distillery. Kilchoman only uses barley grown in the fields around the distillery.

“The 2023 PX Sherry Cask Matured release is our first limited edition to be fully matured in PX casks. Some might consider five years to be a short maturation, but these PX hogsheads give such a rich and sweet character, shorter maturation is the only option to maintain a good balance of flavour. Here, the citrus sweetness and peat smoke of our spirit balance beautifully with the PX character to create a multi-dimensional whisky, rich and sweet with hints of light citrus sweetness and waves of maritime peat smoke,”
This expression is made from a vatting of 61 casks, producing 23,000 bottles with a 50 ppm making it in the heavily peated category.

Kilchoman PX Sherry Cask Matured – Islay Single Malt Scotch Whisky, 50% Alc/vol 70 cl.
Colour…Copper still.
Nose…Sweet, sherried sultanas, a delightful aroma of sweet peat smoke, a little citrus burst, quite maritime with rock pools, seaweed and sea spray.
Taste…An explosion of peaty sweetness, salty sea breeze blowing over the white embers of the BBQ, the citrus note is still there, some fine dark chocolate.
Finish…Long finish, with smoke from a burning sherry cask stave, sherry sweetness, and some light spices in the background.
This must be one of the best Kilchoman expressions I have tasted. Priced at £89.00. Once tasted you must agree this is not expensive for a dram of this calibre. To Anthony and his team at the distillery, you have another triumph on your hands.
