The 2021 release of Kilchoman 100% Islay is made with barley grown on a single farm on Islay, and was malted, distilled and matured exclusively on Islay. Matured for nine years in a combination of 26 ex-bourbon barrels and seven oloroso sherry butts, creating aromas of summer flowers, baking spices, plums, dates and leather that fill the nose. The palate offers notes of baked apples, ginger, cinnamon, malt and vanilla, followed by waves of peat smoke and orange oil that linger in the finish.
