50cl / 50.7% / That Boutique-y Whisky Company – This four-year-old rye whiskey is made with a mashbill of 70% rye, 20% corn and 10% malted barley, fermented using a wine yeast from France’s Loire Valley. It was finished in an ex-rye whisky cask from Kyro distillery in Finland, adding aromas of plump apricot, toasted grain and honeycomb on the nose. The palate shows notes of baking spice, dried fruit and rye bread, leading to a long, spicy finish.
