Redbreast – Dream Cask
Here at Whisky Boys HQ I received a sample of a new Redbreast expression. Head Blender Billy Leighton and Apprentice Blender Dave McCabe unveiled it on a Facebook Live Tasting on World Whisky Day 2017. Which was a very rare Whiskey dubbed “Redbreast Dream Cask”.
This new Redbreast was a 31 year old, single pot still, distilled late October 1985 and matured in refill bouirbon barrels. In 2011 Billy re-casked it into a sherry butt at 48.3% Alc/vol. When bottled in 2017 it was now at 46.75 Alc/vol.
Lets taste it now.

Colour…Foxtail
Nose…Wow, ripe red berries, spun sugar, creme brulee and honeysuckle, orange sponge cake, ripe apricots.
Taste…A Caribbean fruit punch, now deeper and darker dimensions as we encountered rich fruit cake, cherry brandy, hot cross buns (cinnamon and a touch ginger) an unashamed cornucopia of flavour.
Finish…Dry and long finish, nuts now showing, new oak, spiced custard, but, it is the Caribbean fruits that linger the longest.
What can I say, Billy, you have gone and done it again, an oustanding triumph of a dram.
Of all the ranges that come out of Midleton, Redbreast’s expressions are by far and a way the best.
