The third release in Filey Bay's Sherry Cask Reserve series is a marriage of five Fino sherry casks, three of which were filled with pot still distillate and two with column still distillate. Made using Palomino grapes, Fino sherry has a light, dry character which has created notes of sticky ginger cake, figs, boiled sweets, honeycomb and cinder toffee throughout the palate.
