Whisky Recipes – Whisky Marinade for your Pork Joint
Cheer up your Sunday lunch with a delicious Whisky marinated pork joint with heeps of roast potatoes and creamy cauliflower and broccoli cheese.
The Marinade:
1/4 Cup of Whisky (The Whisky Boys choice would be a nice sweet Speyside like a Glenrothes Select Reserve)
1/4 Cup of Dijon mustard
1/4 cup honey
1/2 cup Soy Sauce
1 tablespoons of lemon juice
1/4 cup dark brown sugar
2 table spoons of olive oil
3 large cloves of garlic crushed
1 teaspoon of ground black pepper
1 teaspoon of salt
Soak your joint in the marinade, overnight if possible, turning as many times as possible to get the surface of the joint fully coated.
Roast as per the weight of your joint in a hot oven and then after half an hour reduce heat down. Serve piping hot with the above suggested vegetables – really mouth watering.
Remember to have a wee dram of the Glenrothes to enjoy after you great meal.
