One Cask at a Time

One Cask at a Time is an Edinburgh-based independent bottler with a straightforward but uncompromising approach: hand-select individual casks from across Scotland’s distilleries, bottle them only when the time is right, and let the whisky speak for itself.

Every release is cask strength, non-chill filtered, and without added colouring, no shortcuts, no blending, just a single cask captured at its best. Their range is split across three tiers: Chronograph, Pendulum, and Grandfather. Broadly reflecting the age and character of each release.

Today we’re looking at two of their bottlings: the Auchroisk, a 23-year-old Speyside, and the Jura, a 15-year-old matured in an Oloroso sherry cask from the Pendulum range.

Auchroisk is a Speyside Distillery in Mulben, Banffshire, owned by Diageo. This distillery is relatively young, only founded in 1974. Building had started 2 years earlier in 1972.  Auchroisk Single Malt is a very important part of the J&B Blended Whisky. The only official bottling that Auchroisk released is the The Flora & Fauna 10 Year Old Single Malt.

Let’s now have a taste.

Auchroisk Speyside Single Malt Scotch Whisky – Cask Number 2900667, Distilled 22/09/2012, Matured in Madeira Cask, 23 Year old, 54.8% abv. Bottled by One Cask at a Time

Colour…Rich Copper.

Nose…Elegant and sweet, vanilla is very present, with a plethora of orchard fruits. Some gentle and mild spice notes.

Taste…This feeling of elegance continues, great mouth feel, vanilla and honey merge together, a touch of liquorice lingers for a little while, more spice notes and a wee puff of white pepper, a little oakiness.

Finish…Medium to long, my palate is full of spice and vanilla, oak is still there, apples and pears are floating about.

This is quite a grand single cask dram, really enjoyed this tasting. I found this dram to be quite complex at times and you take the next sip and it feels that it has settled down to be just an easy drinking dram.

Now for the Jura. Owned by Whyte and Mackay. It is a Highland Whisky. Located a stone’s throw from the Whisky Island of Islay, check out their website ( jurawhisky.com ). Jura Whisky has a great reputation among whisky lovers and is up there in The Whisky Boys top 10.

Isle of Jura – 15 Year Old, Highland Single Malt Scotch Whisky, Oloroso Matured, Single Cask, 54.4%  abv. From the Pendulum Range.

Colour…Walnut

Nose…Quite complex, clean refreshing sweetness, gentle warm spices, distant beach BBQ.

Taste…Ultra smooth, beach pebbles and sea-air freshness, sawn oak, crushed mixed nuts, runny chocolate over plump raisins, full bodied and sweet, this dram only needs a teardrop of water if any.

Finish…Long and elegant, the spice and the BBQ smoke lingers well.

Yes, another very fine dram. It would grace and Whisky tasting event.

Retailing at £150.00, which sounds about right for a single cask Jura.
