75cl / 65.77% / Distillery Bottling – This is similar to Barrell’s core Dovetail release but uses older stocks of whiskey from the US and Canada. It is matured in a combination of ex-rum, ex-Port and ex-Cabernet casks from Dunn Vineyards in the Napa Valley. This is rich on the nose with aromas of walnut ice cream, tahini and leather, leading to notes of fennel, flan and coconut oil on the palate.
