9.313 Honey, I’m Home!

55.6% ~ 1st Fill Ex-Sauternes Barrique ~ 17yo ~ Speyside ~ £95.00

We combined selected 15-year-old casks from this distillery and then put that single malt into a variety of casks to develop further; this is one of them. The nose – sweet enough for Winnie the Pooh – had runny honey, toffee, chocolate-covered malted milk honeycomb, Turkish delight, fruit flan and toasted ciabatta. The palate’s syrupy mouthfeel brought us chewy coconut, ginger warmth and a smattering of floral and spice notes, but mainly the delightful fruitiness of red berries, pineapple, mango, rhubarb tart and white wine sangria… read more

63.9% ~ 1st Fill Ex-Oloroso Hogshead ~ 12yo ~ Islay ~ £92.00

This opened with a spring-summer mix of floral and evergreen perfumes on the nose, notably gorse blossom, heather ale and spruce syrup. Accents of rose and salted blueberry muffins followed. The palate was a generous slice of Dundee cake, alongside sweet soy, plus cookie dough tightly wrapped in rich tobacco leaves. Water introduced scents of fairy bread, a warm wool scarf and cranberry, with the palate becoming a lemon posset, plum and warm pastries with honey…read more

11.71 – Kissed by Cherry Lips

48.0% ~ 1st Fill Ex-Oloroso Butt ~ 10yo ~ Highland ~ £48.00

The hush of a candlelit cellar curled around us with leather armchairs, aged oak, peach nectar and silk scarves perfumed with berries. Red fruit clung to old wood like a secret. The first kiss came warm: cherry-laced dark chocolate, coffee grounds and duck in plum sauce. It was heady, rich and plush with velvet tannins. Our second sip was softer, a smooch of fresh fig, balsamic and spice… read more

28.114 – Thrills Up The Ochils

60.9% ~ 1st Fill Ex-Oloroso Butt ~ 10yo ~ Highland ~ £70.00

Meandering across an ice cream parlour’s range of flavours, our noses delighted in scoops of rum and raisin, salted caramel, chocolate-toffee and marzipan fruitcake. The palate added a splash of sweet red wine to a slab of nougat, sliced stone fruits glazed with apple jelly and the sweet-spiced tones of a Manhattan cocktail. Water gave both the nose and palate notes of cherry, spiced orange, flapjack and a red berry finish… read more

36.229 – Date Shake

58.4% ~ 1st Fill Ex-Bourbon Hogshead ~ 13yo ~ Speyside ~ £69.00

A complex concoction of aromas greeted us on the neat nose. On the palate we agreed on a hearty slice of naan bread pizza with a coriander chutney drizzle. Following reduction, we found orange marmalade with salty wholegrain crackers next to Italian cream cheese-stuffed celery and a savoury dill humus…. read more

39.309 – Simply Classic

58.2% ~ 1st Fill Ex-Bourbon Barrel ~ 12yo ~ Speyside ~ £69.00

One Panellist had a cameo in a blockbuster film as they watched an eminent doctor dusting off some dinosaur bones. Others, while not having quite made it through the audition process, got similar vibes but with a sandy desert and warm, sweet hay. On the palate, we enjoyed the sweet and fruity flavours of blackcurrant boiled sweets with a peppery and mentholated liquid centre….read more

41.188 – Jambon-Beurre

55.1% ~ 1st Fill European Oak Ex-PX Butt ~ 13yo ~ Speyside ~ £75.00

Dates and figs, earthiness, sultanas and plummy dark fruits. The Panel agreed we were immediately in classical sherry-profile territory with this one. We also noted a subtle waxiness and lovely aromas of a leather tobacco pouch and crystallised honey. Water made it earthier, deeper, slightly meatier and added a note of camphor. The palate was big and bold, full of plums, star anise, old armagnac, Iberico ham and umami notes of cornichon and soy sauce… read more

50.9% ~ 1st Fill Ex-Oloroso Hogshead ~ 17yo ~ Speyside ~ £97.50

The nose had heather honey and dessert wine sweetness, but also nice touches of exotic wood (a laurel hedge, gorse flowers, sandalwood, hessian, pencil boxes and calligraphy ink sticks). On the palate, we loved the textures and the curious counterbalance between sweet fruits (orange fondants, tinned pears, tutti frutti ice cream) on one hand and white pepper, tobacco, rosemary, mint tea and eucalyptus on the other. 52.51 – A Grand Day In

55.1% ~ 1st Fill Ex-Bourbon Barrel ~ 12yo ~ Highland ~ £79.00

Say cheese! (in the style of a popular British claymation man-and-dog duo, whose favourite is Wensleydale). One Panel member, a big grin on his face, added that here the cheese was blended with dried apricots and served on a sea-salted cracker. Creamy and crumbly, with a slight fruity sweetness and that hint of salt, this delivered a fascinating interplay between sweet and savoury flavours… read more

53.515 – Ointment on Roasted Nuts

56.5% ~ 1st Fill Ex-Bodega Oloroso Butt ~ 14yo ~ Islay ~ £104.00

Our various ailments were cured by hospital corridors, antiseptic bandages and a hot stone massage, so we lit the beach bonfire – nutty smoke and pork grilled over rosemary. The palate also had a light medicinal lick – ointment on roasted nuts, then popcorn, vanilla, lemon peel and balsamic-glazed seared scallops. With water, the nose pitted cinder toffee, marshmallows and pistachio ice cream against coastal rock pools… read more

It remained so on the palate as we added roast pork and apple sauce, plums wrapped in bacon, and honey-roasted carrots and parsnips. 52.8% ~ 1st Fill Ex-Bourbon Hogshead ~ 18yo ~ Highland ~ £93.00

We felt this one nosed like some kind of waxy swimming pool, if such a thing can be imagined. We also got ointments, laundered fabrics, dried flowers, buttered oatcakes and an earthy, fragile background smoky note. With water this developed very nicely with medicinal herbs, eucalyptus, myrtle, wintergreen and heather flowers – becoming more classically rich and ‘Highland’. We passed honeysuckle, lavender, leaf mulch and orchard fruits en route to a tea room where we enjoyed chocolate cake and blackberry jelly on almond bostocks. The palate delighted with raspberry jam and crème de cassis, sweetened black tea and cola, finishing with tingling traces of nutmeg, ginger and cinnamon… read more

On the nose, sweet wine took centre stage – with a supporting cast of fresh fig and melon, almond nut brittle and jojoba sun lotion. Water softened the mood into pâtisserie richness… read more

80.64 – Jams and Hams

58.1% ~ 1st Fill Ex-Oloroso Hogshead ~ 13yo ~ Speyside ~ £75.00

A lighter style of sherry we thought; full of soft aromatic tobaccos, cocoa, light earthiness and mossy tree bark. This was very attractive and elegant, the Panel agreed. Water ushered in cinnamon powder, pumpkinseed oil and salted almonds with a hint of marzipan. The neat palate opened with orange oils, heather honey, dried flowers and camphor. Then we got liquorice, both red and black varieties, followed by a heightening and punchy wood spice note. Water brought forth juicy berry fruits, jams and lovely rich notes of game meat… read more

56.6% ~ 2nd Fill Ex-Oloroso Hogshead ~ 20yo ~ Highland ~ £145.00

Flexing our green leather driving gloves, we reached for our collection of old newspapers in the humidor before searching through shelves of sweet tobacco and single-estate dark chocolate. The palate centred around a baked orange, studded with cloves, pistachios, sweet cinnamon and nutty chocolates. The dram wholeheartedly embraced water, transforming into a honeycomb and butterscotch sauce, with swirls of apple purée, figs and tobacco on the nose.
