Thirty year old Macallan is a rare and rarefied whisky. The time spent maturing in carefully selected European and American oak casks which have previously held Sherry or Bourbon creates a rich, intense liquid, with a deep colour achieved wholly naturally through the interaction between spirit and wood.

An incredibly long-aged Karuizawa. Aged for half a century in a sherry cask, this is rich and complex with notes of spice and fruit, with floral hints. Limited to just 309 bottles, this is presented in a wooden case.
Signatory have bottled this Bowmore 15 Year Old just for us. Drawn from a single cask, there are just 233 bottles of this tasty single malt - once they're gone there will be no (bow)more.
A fruity, limited-edition whiskey that was double-distilled at Cooley's and then filled into bourbon barrels for 16 years. This is a rich, oily single malt with vibrant fruit flavours and a long, herbal finish.
Tyrconnell was a two-year-old chestnut colt that, against the odds, won the National Produce Stakes Horse Race in 1876. This achievement was initially commemorated in a small-batch whiskey made by the local Watts family and now again, 140 years later, in this new limited-edition single malt.

Octomore 8.4, the last in this masterclass series, was created to examine the effect of virgin oak on Bruichladdich's intensely peaty spirit. (The Scottish barley for this edition was peated to 170ppm.) To achieve a balance of smoke and oak characteristics, 20% of the whisky was matured exclusively in virgin oak, while 80% was aged in first-fill ex-bourbon casks and then finished in European virgin oak, which had previously held Octomore 7.4.
The result is a rich and complex dram with notes such as praline, coconut and clove matched by those of barbeque, burnt heather and iodine.
22nd February 2018
A Glenrothes 27 Year Old that was distilled in 1990, then kept in a single hogshead until being freed by indie bottlers Signatory in October 2017.
A balanced eight-year-old bourbon with notes of caramel, vanilla, red fruits, apricots and spice. Wildcatter is made in homage to a short-lived bourbon label created by a notorious Texas oil baron who was known as the 'king of the wildcatters'.
Douglas Laing has bottled a single hogshead of delicious Ardmore 21 Year Old as part of its Old Particular series. A full-bodied dram with notes of smoked meat, tropical fruits, wood smoke, cinnamon and honey.
This whiskey is from George Dickel's private cask programme, which bottles individual barrels of nine-year-old and 14-year-old for individuals. Each bottle is hand labelled and signed by George Dickel's master distiller.
This 18-year-old single malt is part of a series of six Tobermory bottles exclusive to Germany. Aged it bourbon casks, it has a light, fresh and floral nose accompanied by notes of oak, maple syrup and sea salt on the palate.
As with each of the six bottles in the series, this comes with a collector's leaflet featuring a tear-off tab. Those who collect the tabs can enter a prize draw to win a bottle of Tobermory 42 Year Old.
A single-cask edition of Glen Garioch six year old, created by independent bottlers Morrison & MacKay. This sherry-aged, sweet dram has notes of spice, luscious fruits and vanilla.

In 1583 a Spanish Armada was rounding Scotland as it fled from the English Navy. Legend has it that one of the boats in the fleet was sunk in the Tayne Firth near the distillery (now The Dornoch Firth) and that many of its survivors settled in Scotland. This whisky pays homage to those men and their stricken vessel, by putting a Spanish twist on Glenmorangie's classic character.
Finished in, unusually, amontillado sherry casks, Tayne is a fragant whisky with notes including rose petals, roast chestnuts, sweet toffee, Muscovado sugar and tropical fruits.
Undoubtedly one of the greatest bourbons on the planet, Blanton's Gold is hand-bottled from the best casks at the distillery. Profoundly full-flavoured.
An Old Particular bottling of Mortlach from Douglas Laing, full of spice, honey and barley notes. This Mortlach 12 Year Old has been bottled from a single refill hogshead that yielded 341 bottles.
The third in Mars Komagatake's Nature of Shinshu series, which focuses on botanicals local to the distillery, is Shinanotanpopo, which means 'dandelion flower' in Japanese.
Shinanotanpopo is made from a blend of different casks, including ex-bourbon, sherry and white oak – some of which were over 20 years old. This is a floral dram with additional notes of red fruits and soft spices.
A delightful Craigellachie that's spent 18 years maturing in a sherry butt. Bottled by Douglas Laing for their Old Particular series, this has notes of allspice, creamy butterscotch, tobacco, milk chocolate and stewed red fruits.
20th February 2018
Connemara is a peated single malt from the Cooley distillery and Turf Mor, which means 'big peat' in Gaelic, is the high voltage expression of this whiskey. Earthy, full-bodied and intensely smoky, this 50ppm whisky is 'Islay meets Ireland' in a bottle.
Expect notes of peat, citrus, malt, oak and spice, followed by a lingering finish.
A single-cask edition of Glenturret's single malt, bottled by Glasgow's North Star Spirits. This peaty eight-year-old was matured in a refill bourbon hogshead and has notes of smoke, ginger snaps, salty citrus and toasted cashews.
A very special bottling from Australia's Starward to mark their 10th anniversary. This edition was created from a mix of the eight cask types that had been used across the company's history, with a focus on Australian wine and fortified wine casks. The result is a rich, sweet dram with notes of dried fruits, burnt brown sugar and oak spice.
19th February 2018
A perfect showcase for the quality of Kavalan's Taiwanese made and matured spirit - a single cask bottling from a first-fill bourbon cask. Distilled on 10 September 2010, this is rich and fruity with lots of woody spice.
Bottled by Belgian indies The Nectar, this is a Fettercairn 28 Year Old that deftly combines notes of aniseed, orange rind, orchard fruit and pine. Great nectar for Highland hummingbirds.
A single malt created by distillery manager, John Campbell, to honour the master craftsmen who have shaped Laphroaig over the past two centuries. This single malt was first left to rest in first-fill, over-charred ex-bourbon barrels, before being transferred to large, new European oak hogsheads – which have never been used by Laphroaig until now.
The 1815 combines notes of peat smoke, toasted fruits and oiled wood.
15th February 2018
There's particularly sweet nectar in this independent bottling of Tormore 28 Year Old. Whisky hummingbirds will experience notes of caramelised banana, vanilla, baking spices and almonds, alongside a long, sweet finish.

A highly-rated Kentucky straight bourbon matured for an impressive 15 years. Herbal notes are accompanied by orchard fruits, cinnamon, liquorice and burnt caramel.
An aromatic, floral single malt from the Ben Nevis distillery, bottled by Douglas Laing as part of their Old Particular series. The palate is 'overridingly dulcet' with notes of burnt orange, cereal and dark spices.
The pinnacle of Kavalan's early production - a whisky matured in Fino sherry casks, rather than the more usual darker sherry styles. Rich with more fresh fruit than you might expect from a sherried whisky.
Laphroaig Four Oak is, perhaps unsurprisingly, a blend of whisky matured in four different types of cask: ex-bourbon barrels, small quarter casks, virgin American oak barrels and European oak hogsheads.
Oban's 2003 Distillers Edition is, like all those before it, finished in casks that previously held fino from Montilla – the region whose wines rival the sherries from Jerez. Expect notes of light peat, light smoke and rich red fruits, accompanied by hints of orange, spice and brine.
The Duthac is part of the Glenmorangie Legends series: single malts created exclusively for travel retail. This whisky pays homage both to St Duthac, whose grave lies near the distillery in Tain, and to King James IV, who made an annual pilgrimage to the saint's shrine.
Aged in ex-bourbon, ex-sherry and ex-white wine casks this German single malt is very fruit forward. Notes of pineapple and ripe mango are layered with honey and walnut oil – Dawn Davies MW

11th February 2018
A 35cl bottle of 25-year-old whisky from the closed Willowbank distillery, which was operated in Dunedin on New Zealand's South Island until 1997. Notes of sweet malt and golden fruits are interspersed with gentle smoke and a light peat influence in this dram, which has spent its entire life in ex-bourbon barrels.
The Willowbank distillery was the last operational distillery in New Zealand and was closed by its then owners Fosters in 1997. Its stills were subsequently sent to Fiji for making rum.
A welcome bottling of this little-seen Speyside single malt, which often disappears into blends. Brought to us by the wonderful Signatory, who've filled these bottles from two casks, this features notes of apples, pears, buttery pastry, honey and spice.
A charcoal-mellowed single malt from a mystery Irish distillery, this is a very popular dram due to its smoothness and light, mellow palate.

The first-ever 30-year-old whisky to be released from New Zealand. This bottling is a particularly fine piece of whisky history, as its release also makes New Zealand the fourth country in the world to have produced a single malt of that age.
Made from barley grown in North Otago and aged solely in American oak barrels, this is a silky-soft whisky with flavours of rich malt, grassy oak and ripe apricots.

Named after the distillery's famous No.1 Vaults on Islay, which have been home to some of the world's most celebrated whiskies, this is a creamy single malt that has been matured solely in first-fill bourbon casks. The sweet vanilla notes blend deliciously with Bowmore's classic notes of coastal peat and citrus fruit.
Bottlings of Miltonduff are few and far between, making this Adelphi edition of its 33 Year Old single malt is a great treat for fans of its floral, grassy whisky. This has been bottled from a single cask at cask strength.
A deliciously rich Glendronach 22 Year Old that's been bottled from a single sherry puncheon exclusively for the UK. Notes of thick toffee, Christmas cake, dark chocolate and coffee are followed by a long, sweet finish.
Independent bottlers Adelphi have filled a single cask of 1989 Bowmore into just 207 bottles, creating an edition that will appeal to lovers of the distillery's fragrant, mellow spirit.
5th February 2018
A 20-year-old Glenrothes that's been rescued from a single sherry butt by independent bottlers Signatory. Distilled just three years after the distillery began releasing its own single malts, rather than just contributing to blends, this has all the delicious sherried notes you'd expect.
