Whisky Recipe – Impressive Cheats Tart

Put a selection of your left over dried fruits, currents, raisins, prunes, candied peel, really any dried fruit mixture and marinate in a good single malt, (Glenlivet Whisky – 15 year old) I would put about four generous tablespoons, obviously dependent on how much fruit you plan to soak. Then add the zest of an orange and a lemon and soak overnight. I also like to put a cinnamon stick into the marinade.

* Brown sugar

Another alternative for your boozy fruit is to either make short crust pastry or cheat and buy some premade. Get a flan tin, butter it generously, roll out your pastry, but keep a little pastry aside as you will want to roll out and cut thin strips. Ensure you prick the base with a fork and blind bake for about 20 minutes at 180C or Gas mark 4. Remove and then cover the base with a generous layer of apricot or orange marmalade (Whisky marmalade would be better). Drain your boozy fruit as you don’t want it too wet and layer over the jam and then open and drain your tinned pears. Cut the pears into thin slices and arrange neatly from the centre of the flan. Once the boozy fruit is covered, dust the pears with cinnamon or ginger (you can tell I like cinnamon) and then roll out a line of pastry and cut thin strips. Arrange the strips in a crisscross design, sprinkle a little brown sugar over the top and place in the oven for another 20 – 30 minutes.

I like to serve this with Whisky Ice cream, but that is in a different recipe.
